Cream Cheese Filled Pumpkin Muffins

YUM! I omitted the sunflower seeds, since I didn't have any on hand, and have made this again omitting the cream cheese. GREAT mix of spices that really taste like fall. I am going to try sprinkling just a little bit of brown sugar on the top next time to get a little more crunch. One more modification - I cooked my second batch a little hotter (around 400F) to see if that would crisp them up too, and it seems to have worked well. The original recipe worked though, too, I'm just offering up my tweaks to get people thinking! Thanks!

E-Z Drop Biscuits

Our new family favorite! I didn't have cream of tartar, and it seems fine. We also have halved the recipe and still made 12 (small) biscuits with no problem. Thanks!

Easy Eggplant Dish

I would give this 3.5 stars if I could. I thought it was just okay, a little lacking in the flavor department, but not a bad way to use up an eggplant and extra squash - almost like a variation on squash casserole.

Hamburger Pie

a nice base of a recipe. my husband and son liked it. I think next time I'll put the meat on the bottom and potatos on the top more like a traditional shepard's pie.

Sweet and Sassy Hash Browns

This was pretty good. I used two sweet potatos and a half of an onion (only because that was what I had in the house). I chopped the potatos instead of shredding them, and while it took a bit longer to cook, they still had a great flavor. Thanks for sharing - I love to use sweet potatos over white any time I can!

Toasted Garlic Bread

Very tasty! I used a loaf of Italian bread from our local bakery, but since there are only three of us, followed the spread recipe generally (ie. about 1 tbsp. butter, glug of oil, etc). It broiled up nicely in our counter toaster, and does taste like restaurant bread. Will use again.

Meatloaf in a Mug

This is a quick and easy recipe for meatloaf. I adjusted it for a pound of ground turkey, and it worked well in 4 mugs (with some additional cooking time). I also added some spinach a green kick. Thanks!
