Delicious Pumpkin Bread

I added 3 TBS pumpkin pie spice, 2 tsp vanilla and 1 cup of pecans. The extra spice gave it wonderful flavor.

Bread Pudding

Awesome recipe. The sauce is definitely a winner and should be used warm. I added cinnamon and nutmeg to bread pudding and also used nutmeg in the sauce. Incredible! Cooks well not in a water bath too, just lower the heat a little.

Key Lime Pie V

This is a response to a comment below: the eggs in a key lime pie recipe don't have to be heated because they are chemically cooked by the acids in the lime juice. It's like when something is smoked.. it's not raw, just not cooked with heat. I assure you, you're not eating raw eggs.

Molasses Sugar Cookies

REALLY yummy! Spiced well and taste like perfect little gingersnaps but not rock hard. I added 2 TBS of corn syrup to make them a bit chewy. The recipe makes tons too!

The Best Pound Cake

This recipe is fantastic. I even called my mom to tell her that her recipe (that was passed on from her grandmother) has seen its last generation because I won't use it anymore. This cake comes out dense like a pound cake but soft and moist like a regular cake. Absolutely wonderful! And it makes a sweet crust on top that is delicious. The only problem that I ran into was putting it into a cold oven and then turning it to 350. It burned on the bottom. Maybe next time I'll put the pan in when the oven is heated up halfway to give the cake a little time to rise but hopefully not burn. Very easy and tasty recipe. Thank you!! (though my mom doesn't thank you)

Zucchini Cobbler

I am shocked. My husband is shocked. I am amazed how cooking zucchini in lemon juice could make it taste like a tart apple! The texture was the same because I halved, seeded and sliced the veggie pretty thin. I also used half brown sugar an half white because I love the flavor that brown adds, along with 1/2 of the flour replaced with quick oats. Even when eating the zucchini pieces without any crumb topping at all, it is EXACTLY like an apple. Who knew?! Also, this dessert is not too sweet. I keep walking in to taste it and can't believe it.

Satisfying Eggnog

Tastes awesome. Have made it a few times and it's better with higher fat milk, of course, but also if the yolks are tempered with the hot milk/Splenda mixture instead of stirring them in at the beginning. This eliminates having to strain the scrambled egg bits out of the drink later on. Very custardy and rich. The addition of the rum is just OMG good.

Some advice for the person who added 7 tsp. cornstarch.. Cornstarch only thickens when it comes to a boil so that's probably what the problem was.

No Bake Cookies IV

These were completely different from the fudgy no bakes I'm used to. They were quite tastey though. I added coconut and extra peanut butter to it and they were wonderful. I wasn't sure if the ball of sticky mess (before I kneaded in the dry ingredients) was how it was supposed to look but it tasted good afterwards. I too rolled them into balls but they were a bit hard to bite into so I think I'll flatten them out next time.

No Bake Cookies VI

Came out good and very sweet. More of a grainy, sugary texture than the creamy, fudgy texture that I'm looking for. I do like the more chocolaty flavor of the choc. milk powder though compared to the cocoa powder.

Pretty good, though bland. I would definitely add salt and use either another can of Cream of Chicken soup or actually prepare the soup and pour it over. Also, I would use a 2 cup size bag of cheese instead of the tiny amount it calls for.

Rhubarb Stir Cake

Was a pretty tasty cake. More like a coffee cake or Blueberry Buckle with rhubarb, not berries. My rhubarb bits seemed to float and I might consider shredding it next time to avoid the wet pits.

Boston Brown Bread III

Microwave Oven Peanut Brittle

This was good for a microwave recipe. It wasn't as buttery rich as I was hoping for but it has a good taste. I tried to be smart about it and line my tray with greased wax paper before pouring the mixture to cool. Don't do this! The candy fused them together like you wouldn't believe and is now an extra serving of roughage for my husband.
