Curried Potato Salad
substituted 1/2 the potatoes w/ yams, didn't have celery, used celery seed

Easy Morning Glory Muffins
I added drained, crushed pineapple instead of coconut and took other recommendations to substitute 1/2 the oil for applesauce, also used 1/2c. buckwheat honey instead of sugar. YUM!
