Onion, Garlic, Cheese Bread

I have made this several times and it is quick, easy, and delicious! I don't usually have dried onions on hand so I use fresh onions and chopped garlic. I followed the recipe the first time, but since then, I pretty much double the onions, garlic, and cheese. How much you add is just a personal taste thing. This bread makes amazing grilled cheddar cheese sandwiches!

Hash Brown Casserole II

This is a good base recipe. I make a variation of this periodically, usually for holidays. My family just called to ask for the recipe, so I forwarded the link. I usually substitute cream of mushroom for the cream of chicken, and I like to throw in sliced mushrooms and ground sausage to make it a hearty breakfast meal, more than a side.

Cranberry Orange Bread

I have made this twice now and it's excellent! I love tangy, so I've used fresh cranberries and its been quite popular with my family. I usually throw in the whole bag, which is slightly more than the 2 cups called for.

Fried Empanadas

I've made this recipe several times, both as written and with changes. It's great both ways! I've found the egg is so subtle I don't really miss it. Instead, I usually replace it with diced potatoes or hash browns if I don't want to wait for the potatoes to cook. I've also tried puff pastry instead of the dough recipe and it's probably sacrilege but it's handy for a quicker meal. You can freeze the filling, the rolled out dough circles (separated by wax paper in a ziploc), or the whole cooked empanada. The puff pastry doesn't reheat as well. The recipe as written freezes great and microwaves like new!
