Zucchini Bites

I meant to review this recipe a long time ago. I think it turned out great, pretty delish! My co-worker even commented on them, as I shared them with her, she suggested I make them for a potluck which I am going to.

Stuffed Zucchini

Eh. This wasn't very good. My gut instinct told me to discard the seeds and not add it into the stuffing. I didn't listen and of course I ended up not liking it. But it wasn't just because of the seeds, it was also because of the crunch factor with the zuchinni. I steamed it a little before to avoid it, guess I didn't steam it enough, it was still crunchy after it was baked. Next time, I'll omit the seeds and steam the out of the zuchinni.

Tie-Dye Fruity Cupcakes

After reading the reviews, I was really hesitant on making these. I didn't want crummy or gummy cupcakes but I gave it a shot. I was pleasantly suprised as they turned out great! I was really precautious though, and didn't put a whole 1/4 cup of jello in each bowl, maybe a half of a 1/4 or less. I really wanted the color and not necessarily the flavor, but even with that little amount, they did taste fruity! I also messed up on the colors, I went to the store after meeting some friends at the bar, and I picked up orange, raspberry and lemon...my bad but hey they still turned out great. This time I will get the colors right and buy lime, I am making these for a potluck next week and I'm looking forward to it!

Pumpkin Roll I

I am so proud of myself! I did this and it turned out GREAT! It was really easy, I did line the pan with parchment paper, makes it soo easy just to flip over onto a towel. I am not a great baker, in fact I rate myself as extremely amature! But took this to work, and it was gone by noon. Because I love the ratio of this recipe, I am going to try and substitute other ingredients, like pureed cranberry...and make a whip cream frosting, I'm not sure if it will turn out, but it seems like you can mix and match stuff. But anyways, Love this recipe!

Pumpkin Fudge

I'm not sure what happened but as soon as I put the white chocolate chips in and the vanilla extract it turned to DUST! Dry crumbly and resembled BROWN SUGAR!!! Followed this recipe to a T...ahhhh I'm soooo mad!!!! But hey I should have tried this recipe BEFORE I decided to do something cool for Halloween at work tommorow. Now I have to spend more $$$$ and buy some baked good at the grocery store!!!! Pathetic.

Swiss Chicken Casserole II

I did this recipe exactly as stated and it came out really dry and crispy. It had no moisture in it whatsoever and it was a total fail. I didn't read the reviews for alterations cause I didn't have the time but next time I will. This one was a miss.

Chocolate Trifle

I made a few alterations as I read all the reviews and chose to do it the way the very first review appears after the recipe. I whipped up a batch of heavy whip cream and mixed it with the chocolate pudding, which by the way 1/2 cup of water to pudding makes it waaayy too sticky and hard to mix, so the next batch I added 1 whole cup of milk. Anyway, I did it like this: brownie, caramel, choc pudding/cream, cool whip, choc pudding/cream, then layered whip cream on top. I didn't continue with the cool whip cause to me cool whips nasty and I just couldn't bring myself to top it off with it so real whip cream I did. It tasted really good and I am glad the way it turned out. Next time and there will be a next time, I am going to use chocolate mousse, (theres a great recipe on allrecipes, amazing, its my go to for mousse always!) and white chocolate mousse, and keep the whip cream and the caramel.

Burgundy Pork Tenderloin

I liked this recipe although I gave it a 4 because I think there was too much wine for the gravy. I put in a packet like instructed and mixed it up hoping for it to thicken but it didn't. I told my bf oh well, its not exactly a gravy but he was like thats ok its like an au jus lol. I don't really like pork very much either but I think this dressed it up a bit. It also reminds me a little of Beef Bourignon without the beef lol. I think my pork days are over but still it was pretty tasty despite the the gravy.

Artichoke Chicken

This was pretty good. At first I was going to give it 4 starts because I didn't think it was spectacular, but the boyfriend seemed to like it and I really did too. I use half mayonaisse and half sourcream mixt because I don't like using a ton of mayonaisse for things. Overall really good and I wil make this again.

Fluffy French Toast

This is my very first time making french toast. (I know, I just started cooking and enjoying it lol). So I can't really compare it to other recipes, but it came out perfect. Tastes like great french toast. I would note though, that I did change the servings to 4 and with that, the mixture only soaked 2 slices of the bread that I had prepared. Next time I will double the recipe to make it for 4.

Chicken Breasts with Balsamic Vinegar and Garlic

So made this for the family and everyone really didn't like it. I'm pretty sure it was the balsamic vinegar...I guess you have to like it. But I have to say that my boyfriend and I love this balsamic vinegar marinated artichoke at a restaurant we go to, I figured balsamic vinegar could work with everything which is why I tried this recipe but I guess not.

Heavenly Chocolate Mousse

Amazing! Words cannot describe how good this was! The taste was great, every bite was velvety delicious, I will definitaley make this again. My boyfriend thought it was very good and he ate both of our portions lol. Great recipe!!

Blackberry BBQ Sauce

To die for!!! I have never made home made BBQ sauce and I was so thankful that I chose this recipe to start!! It is soo delicious and the flavoring is great!! I added a few things though to give it an added kick: paprika, hot sauce, salt and pepper, real mustard (not powdered) and 2 gloves of crushed garlic. It wasn't too sweet and it added the right tang that I wanted, my boyfriend who rarely compliments me on my cooking said it was really good. Yay! Thanks for the recipe!
