Pan-Fried Steak with Marsala Sauce

The pan-frying went well... but, something went horribly awry with the marsala sauce. I'd prefer it without the sauce... or maybe a thicker one.

Swedish Meatballs

YUM! Now I don't need to go to IKEA when I'm craving swedish meatballs and gravy. Added a dash of Worcestershire and sour cream like other reviewers recommended, but not sure that I needed to. Used a little bit less milk in the gravy as I like my gravy a bit browner/meatier.

Took another reviewer's reccommendation to cut the recipe in half and that was plenty for several sandwiches. We like lots of garlic, so we used a garlic infused olive oil. It was easier than I thought!

Bagels II

We really enjoyed these! The dough was hard to work with... had to have the boyfriend do the heavy kneading as I am wimpy and the dough is quite tough. Next time may used the kneader function in my bread machine instead. Also, rolling the dough into ropes was a bad idea for us: it made it hard for us to shape them into cohesive round bagels. We ended up just cutting the remainder of the whole big loaf into 9 sized cubes, shaping that into a ball (instead of rolling it into a rope and then shaping it into balls), and poked the holes in the middle. Otherwise, yum! Also... if you haven't figured out how to steam bake, we used our cast iron skillet, let it sit in the hot oven on the lowest rack while it was warming up, then right as we put the bagels in we threw some water into the skillet and shut the door as fast as we could to keep the steam in. Worked fine for us!

Roasted Garlic Mashed Potatoes

This was exactly what I was looking for. I used chicken stock to flavor/salt it up a bit... added the sour cream that another reviewer noted to make it creamier/milkier with a little tang. Delicious! Made it with salisbury steak and broccoli! Yum!!!

Scrumptious Salisbury Steak in Mushroom Gravy

Yum!!! I'd make it again. Took the advice of another review and used 2 cans of golden mushroom, 1 can of french onion, and fresh mushrooms in place of the gravy recipe listed here. Faster and very tasty. I love that I didn't have to bake it.

Quick and Easy Pancit

Wow! So easy and delicious! I used bean threads instead of rice noodles and it turned out great. Didn't add any meat because I made marinated pork shish kabobs and pork egg rolls with it. Instead, I bulked up on veggies by adding sliced peapods and more carrots. Added extra soy sauce also. Oh, so good and it makes a TON! I could split the recipe in half and still serve 6.

Tracy's Tomato Artichoke Rice Salad

Made this with souvlaki and tzatziki sauce and it paired GREAT. Omitted the black olives because the little man in the house doesn't like them... next time might cut back a little on the onions. But, it was DELICIOUS!!! Thanks for an awesome recipe!

Yum! That tzatziki sauce that another reviewer recommended goes GREAT with this. The dish is also paired very well with the tomato artichoke rice salad on this site. DELICIOUS. I split the recipe in half because I was only making dinner for two, but I kept the marinade amounts the same and that turned out to be just enough. If I make a 4 pounds of pork tenderloin next time, I'll double the marinade. Thanks for a great recipe!

Salmon with Lemon and Dill
