Stuffed Shells II

These were okay. Didn't love the cottage cheese/tomato sauce combo as I typically enjoy an unfettered tomato sauce. But, the recipe was easy and fast and lasted us a while.

Famous Pork Chops

Had a friend over for dinner and she and my boyfriend LOVED these. I wanted them to be crispier but they seemed to like them as they were. Cut the butter in 1/2 and added sliced onions on top to bake with the chops. Yum!

Slow Cooker Italian Beef

good tip to whoever recommended it, but adding all the juice from the pepperoncini jar gave it a nice spicy bite. I also added a roasted red peppers in the last 5 minutes of boiling and served it over a toasted french bread roll with provolone cheese. yum!

Key Lime Pie VIII

Very yummy. Would make it again and cut the lime juice down to 3/4c. And for those of you who are wondering what the nutritional numbers are when you substitute reduced-fat graham cracker crust (Ready-Made, Keebler brand), low-fat sweetened condensed milk (Eagle Brand),and Lite Cool Whip, here are the details per serving. I used regular Jell-O Instant Pudding because the fat-free/sugar-free was 1oz and the recipe called for 3.5oz and I wasn't sure it would work. (cal/fat/carb/prot) Pudding (45/0/11.5/0), Crust (100/3.5/15/1), Whip (62.5/3.1/9.4/0), Lime Juice (8.25/0/2.8/0.14), Condensed Milk (162.5/1.8/28.7/3.75), TOTAL per serving (378.3/8.4/67.4/4.9)

Refried Beans Without the Refry

Wow... I can't believe how easy and healthy this is! I cut back on the salt initially to 3 tsp as others suggested, but then found that I wanted to add a little bit back after I had put the beans through the food processor. Also, added chile powder, the other 1/2 of the jalapeno, and more cumin as others suggested. Appreciated the other reviews that pointed out it will cook just as well on high heat in 4 - 4.5 hours... just make sure you stir it occassionally. It does make quite a bit, so I froze 1/2 of the batch with extra liquid on top as others recommended. You can also freeze the leftover broth to add back later as needed. Very yummy and I'm so happy it's as healthy as it is! Will make this often! Thanks for the recipe!

Not as light and crispy as I thought it was going to be... but, it tastes very good. We dipped the ends in milk chocolate and then rolled that in red/green sugar to make it festive.

Classic Lasagna

Very good sauce! But, I don't think it really needs a whole 90 minutes to bake. We had a brown-not-quite-burned crust of cheese on top at 60 minutes. Probably would have been okay at 45-50 minutes.
