Pimento (Red Pepper) Cheese-Bacon Burgers

Obviously it's not good for you. I don't think anyone in their right mind would think a bacon cheeseburger is health food. But it certainly is delicious. Top it with sauteed mushrooms and jalapeno slices.

Jalapeno Hot Sauce

I've made this twice, once as the recipe calls and another making some slight changes. Both times they're very very good. The second time I made it I added 1 packed tablespoon of brown sugar, 1 tsp cumin, and 1 tsp ancho chili powder. I also cooked the 2 habaneros with the jalapenos which really helped the heat quite a bit. I liked it better the second way. The amount of vinegar is just right, since this stuff is supposed to be very very similar to tabasco sauce.

Barlow's Blackened Catfish

Very good. I added 1/4 tsp of rosemary and 1/2 tsp of thyme (both dried) to the blackened seasoning and let them sit in the fridge for 20 minutes. And a very very hot cast iron skillet is the way to go!

Taco Pie

Turkatron: Is that a taco pie? Meatwad: Mm-hmm. Turkatron: Taco pie!! Meatwad: I added food coloring 'cause it's a holiday, but it turned black 'cause I added all the food coloring I had. And I ate this butter straight out of the tub, 'cause it tastes good. There's a reason behind everything. Turkatron: Enjoy those tacos now, for in a thousand years they will be illegal! Ha ha ha ha-I think we all know why. Meatwad: We know why. Turkatron: Anti-taco legislation! Disestablishmentarianism!

Basmati Rice

Very good. I washed the rice though, with cheese cloth and running water to get rid of some of the starch. I roast the cumin on the stove before adding it.
