Broccoli Salad I

Have made this several times. The dressing is a bit sweet for my taste; you might consider cutting the sugar back slightly. My husband prefers it according to the recipe. I always use regular raisins, recommend the sunflower seeds when they are available, but aren't essential. We have also substituted shredded carrots or cauliflower for some of the broccoli. Do give the dressing time to sit and mingle flavors. Always excellent!

Fresh Asparagus Soup

Just finished making this using an immersion blender. Differences: Sauteed onions first. Also used chicken broth and sour cream (since I didn't have veggie broth or plain yogurt. WOW!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

A major winner at our house. The rub can make the overall recipe a bit spicy for some, but if you don't mind a little heat, definately go whole hog. We roasted in the oven with a thermometer, glazing twice about twenty and ten minutes from the end. There was more than enough glaze for roasting the loin, passing around the table, and some left over for ribs another meal (excellent, even without the rub).

Bisquick® Blueberry Muffins

Easy, effective, tasty, but stay unavoidably biscuit-ish (a little heavy and dry) despite my efforts to adjust the recipe so they are more like a light muffin. They are more moist after being refrigerated overnight but are lightest just out of the oven.

Slow Cooker Tapioca Pudding

Truly excellent (though you should add the vanilla as suggested by other reviewers). You can use the large pearl tapioca for this recipe just fine so long as you let it sit a bit first. If you allow the pearls to soak overnight, you only need to cook it for about two hours. I have made this several times in batches ranging from half size to a quadruple batch and never had a problem yet. If you have several people in your home, set a timer with a note requesting that the crockpot be stirred and timer reset for another 45 minutes, to simplify your job even more. This way whoever is in the room can take care of it and you don't have to linger.

White Chili I

It deserves 4 and a half, but it won't let me do half. I used dried beans which I drained before adding the broth, a fresh Aneheim pepper from my garden, and ground turkey. I agree, it needed something. Lime juice was an amazing addition and with some salt, the flavor was great. It wasn't as pretty as it would have been if I had used chicken; if I used the ground turkey again, I would add black beans in as a subtle flavor addition and to add an asthetic touch. Habenaro would probably give a better flavor than either the suggested canned chili pepper or the aneheim I used (just do NOT include the seeds unless you like it really spicy and remember the longer you cook it, the spicier it gets).

Tuna Pea Wiggle

Don't drain the tuna: you're draining off flavor. Drain the peas instead. I added about a tablespoon of onion soup mix as well. Had it as a gravy over mashed potatoes. Pretty good, very easy: will make again.
