Wild River Bloody Mary Mix

Love it! Perfect as is. I tried adding 1/8 tsp horseradish (after sampling it with the base recipe) and liked it less. It's also OK with 1/4 tsp lemon juice added, but that didn't particularly help much either. Stick to the basics, and let flavors blend overnight if you can.

Molasses Sugar Cookies

No need to melt then cool unless you have time to kill :) Just blend the shortening in (like you would in normal cookies), then roll into balls as soon as the dough is complete (no need to refrigerate). I've made this a bunch of times, and my favorite variation involves replacing 1/2 cup of shortening with real butter, half of the white sugar with brown sugar, and half of the molasses with honey, which gives the cookies a richer taste. I usually reduce the cloves by half as well since I don't like a strong clove taste. Delicious!

Potato Leek Soup III

Delicious with (much) less cream and butter... this looked like a recipe for a heart attack, so I lowered the butter to 6 tablespoons and the cream to 1 cup of light cream, and cooked it. FYI, I used 1 tsp of salt and 1/2 tsp pepper. Delicious!!

Rhubarb Cheesecake

This recipe is decent, but I carefully followed the directions and poured the cream cheese mixture directly onto the rhubarb hot from the oven... and think I scrambled the eggs in the process! The resulting cheesecake was decent overall, but had a hint of eggy taste and texture--not something you want in a cheesecake!

Apple Strudel Muffins

I made a few changes to make this recipe healthy, and it was still delicious! Here's what I did: a) replaced half the flour with oat bran b) replaced the butter with applesauce, c) cut the sugar in half, and d) added a teaspoon of cinnamon. Yummy!

Low Fat Apple Bran Muffins

"Low fat" and "bran" don't have to mean flavorless, which these were, even though I tried adding more cinnamon as reviewers suggested. I recommend making the "Apple Strudel Muffins" instead, but a) replacing half the flour with oat bran, b) replacing the butter with applesauce, c) cutting the sugar in half, and d) adding a teaspoon of cinnamon. Voila! Low fat apple bran muffins that taste good, unlike these.

Cathy's Peanut Butter Fudge

When you add the peanut butter and vanilla, stir quickly (it won't take much time to blend) and then immediately pour it into a pan--if you rest and then start stirring again the fudge will be grainy :(
