About this Cook
We are empty nesters living on the beautiful Central Coast of California. We have two dogs, several birds, and a few (LOL!) aquariums. We both LOVE to cook and NEVER repeat a recipe. Once a recipe is finished and we have eaten, the recipe gets tossed! There is just too much out there to try! Cooking is therapy for me. I would rather spend (2) hours in a good grocery store than a mall any day!!!
My favorite things to cook
Anything that includes fresh food. I do not like to use prepared ingredients (can of cream soup, jar of this, can of that, etc.).
My favorite family cooking traditions
We are so not tradition-minded people. My husband's comfort food is tomato soup with grilled cheese sandwiches. I took those two favorites of his and twisted and turned them into a gourmet meal! He still loves them (and me)!
My cooking triumphs
I once cooked a whole, large turkey marinated in Cherry Grand Mariner for 24 hours and then cooked the normal way...breast down. When done, you could only lift the bones out of the pan...the meat stayed behind! Amazing, flavorful, and ohhhh so tender and juicy!
My cooking tragedies
Putting something (CANNOT RECALL WHAT IT WAS!) in the oven and 15 minutes later finding the (2) cubes of butter still in the microwave (softened them in there) that should have gone in the recipe!

Cream Cheese Squares
Super yummy! Super easy! We had some Honey Pecan cream cheese in the fridge so we added that to the regular cream cheese. LOVED IT! Used coconut oil instead of margarine.

Grilled Brown Sugar Pork Chops
Family LOVED this recipe! There are three of us and WOW! All gone!!! I did not change anything! In fact, I doubled the sauce because I knew we would use it heavily as a dipping sauce! Sure enough - all gone!

Emily's Famous Chili
Yum. Yum. Yum. Plain and simple. At first, reading the ingredient quantities I thought maybe too heavy on the chili powder and cumin. NOT!!! This recipe has given me permission to add A LOT OF SPICE to my chili! However, I did not put in the 7 oz can chipotle peppers in adobo sauce! That would make it crazy-hot! I did put in about 15 slices of jarred jalapenos. Perfect. I shredded white cheddar cheese, diced avocados, chopped and mixed together some white onion, green onion, and sun-dried tomatoes and mixed them together, and offered a little sour creme - all for toppings. This will be my ABSOLUTE go-to chili recipe. THANK YOU Emily! Fantastic! Husband LOVED it!
