Toaster Biscuits

Let me start off by saying that normally, I never review a recipe unless I try it unchanged. So one cannot consider this a negative, nor even a neutral review, because I changed it from the beginning. On the other hand, what I wound up with wasn't half bad, and I'll probably make it again. :) I was hoping for something that resembled the "Australian Toaster Biscuits" that Thomas' used to sell. Based on other reviews, I reduced the salt to 1.5 tsp, and added 1/4 c milk. The salt reduction wasn't enough. I added about 3 tbsps of sugar, which overcame the salt problem. Made the first two, and still didn't like them very much. I'm not really a fan of sweets, but I decided I might as well just make them honest-goodness "sweet biscuits" and added an additional 1/4 c of sugar. They came out tasting pretty darned good. Next time, however, I will reduce the salt to 1 tsp, and up the milk by an additional ounce or two.

Simple and Sweetie Blueberry Cobbler

Okay, I've FINALLY found it! The recipe my grandmother use to make, but she called it "Lazy Man's Pie." I'm thrilled that I got my hands on it again, because I've been dying for some and couldn't remember the proper proportions for the batter.

Perfect Sesame Chicken

"Perfect" pretty much describes this recipe. Sadly, I will not be making it often, as my family likes it WAY too much and I wind up having to stand there for AGES deep frying 5 lbs of 1-inch chicken cubes. That gets old amazingly fast. :)

Coq au Creme

I found this recipe quite tasty, however I blush to confess that I misread it and used thyme instead of rosemary. I don't like rating recipes I didn't make as written, because then it's not a rating of the recipe, but a rating of my own cooking. However, it turned out so well in it's altered state that I wanted to mention it for those who might wish to try. The only other changes I made were using fresh mushrooms and making the sauce a bit thicker.

Fish with Tahini Sauce

The sauce was very nice. I didn't have tahini, so I substituted 3 parts peanut butter and 1 part sesame oil (from a hint I saw somewhere else on the web). My son didn't like it at all. I didn't care for the sauce with the fish. My husband and boarder both gobbled it down. I think I'll try to find something else to put the sauce on.

Citrus Chicken and Rice

This recipe is beyond dull. However, it's not beyond saving. As suggested by another reviewer, I used lemon pepper on the chicken before browning it. It was still fairly tasteless, so I whipped up a quick orange sauce of orange juice, lemon juice, sugar to taste, a dash of salt and thickened it with cornstarch. With the help, the family found it good, and it will probably work it's way into our regular menu cycle. It is quite fast and easy, even with the "extras" so it gets kudos for that.
