Cheeseburger Meatloaf

Delicous! I really liked this - down to the last bite. Not the easiest meatloaf you will ever make but the result is worth it. Not too hard, just more work than most loafs I have ever made. Rolling the load like a jelly roll takes some practice and patients. Give this a try if you love a moist meatloaf dripping in cheese. Oh I do...

Simple Mexican Rice

The recipe was PERECT. I made dinner for the in-laws on Christmas Eve and wanted something homemade and this recipe did not disappoint. I made it exactly as stated. Very easy yet flavorful. Next time I might add a bit more "heat" to it as I like my mexican food with some kick, but it was very tasty as is. If you are looking for an easy mexican rice recipe, I encourage you to give this one a try. Five Stars, a winner!

Cottage Cheese Chicken Enchiladas

We loved this recipe and will make this again. Only change I made was to add black olive to the chicken mix, and black olive slices to the top. Delicous recipe, give it a try!

Easy Shepherd's Pie with Garlic Romano Potatoes

Love this recipe! I have made a couple of times now. Opted to use parmesian cheese rather than romano and that has worked out fine. Made to recipe otherwise. Give this one a try!

Turkey Pot Pie II

You will want to give this one a try! It was really easy and did not disappoint. However, when I try this next time I will play with some seasoning. It definately needs some salt and pepper, perhaps some poltry seasoning. I made the recipe exactly as called for and it was really easy and came out as expected. I used store bought premade crusts, frozen mixed vegetables. Always looking for ways to use up left over turkey!

Peanut Butter Cookies VII

I can see why all the debate on this recipe. This is definately a light, dry version of the cookie. If you want soft and chewy, this is not for you. Overall I think they turned out excellent. I used Crisco butter sticks for my shortening, and sprayed my sheets with Pam. Other than that, made exactly to the recipe. Give them a try!
