Mom's Zucchini Bread

Reviewed: Aug. 29, 2012
Really, really good. I almost always use the recipe as written the first time I make it. This time I made the crumb topping as another reviewer suggested. I also substituted applesauce for 1/2 of the oil. 1 cup brown sugar and 1 cup white sugar. Also baked it in 9 x 13 pan. This is my favorite recipe. Crumb topping really makes it! Great recipe, thanks to many:D

Amish White Bread

Reviewed: Aug. 11, 2012
Made per recipe, turned out just perfect! Really easy to make. I did not use a mixer. Quick rise time. Only baked it for 23 minutes. Must be my oven. If it smells wonderful, check to see if it is done. Sounds solid when tapped. Really quick, easy recipe.

Hummus III

Our family really enjoyed this recipe. We may change it next time...maybe add a little bit of jalapeño and or cilantro. Definitely will make it again.

Good Old Fashioned Pancakes

Reviewed: Apr. 28, 2012
This is not a very good pancake at all. Similar to what comes out of a box. Yes, I added 1/2 tsp. of vanilla. It did not help. For a truly wonderful pancake try oatmeal raisin breakfast pancakes by Dorie Greenspan. Skip the raisins if you want to, they are absolutely my favorite.

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Nov. 12, 2011
I have been making this recipe for many years. Taste and consistency great as written. I think it works better to cut the cake in half. Cut across the length, not with the length. Then roll them up starting with the cut side. Use 2 towels making 2 rolls, of course. Elevate off the counter on a cookie rack to cool. Spread half the icing on each roll when rolls are cool, then reroll. Keep refrigerated. Can freeze beautifully. I have never had a problem sticking using parchment paper, i don't even spray. After baking, let cool 5 min. Grab the parchment paper which extends past the pan and leisurely flip cake over onto a towel, then cut and wrap to totally cool. Frost. Reroll. Super easy recipe after you have done it. Looks good, tastes great! ,

A-Number-1 Banana Cake

Very good just as written. Everyone whined that no icing was used until they ate it without the icing. It really does not need icing.

Texas Sheet Cake V

Needs more chocolate flavor. It was ok otherwise. Will not make as written again. I would start with 7 T of cocoa powder for cake and frosting, use buttermilk in the frosting, and maybe try coffee for replacement of the water.

Easy Chocolate Fudge Cake

Reviewed: Aug. 4, 2010
My goodness. I really messed this up somehow. The box cake was, of course, fine. The fudge sauce was grainy. I cooked it at a full boil for 2 min. I then added the extract. Poured it over the cake as you are suppose to. Maybe the white sugar should have been confectioners. Really turned out awful.

Rich Chocolate Frosting

Very good. Calculated for 16 servings. Still way too much for 9x13 cake. Flavor and consistency was quite good. Will definately use this recipe again.

Taco Salad III

Reviewed: Jun. 28, 2010
Made it, loved it. We like chopped black olives, will add that next time. Will use less dressing next time. Had leftovers. Will have bowl of lettuce separate from bean, meat, onion, dressing, etc. mixture. Serve Fritos on the side so they don't get soggy. Teens say it is all mixed at grad parties, goes quickly! My daughter likes hers with sour cream and taco sauce.

Fresh Strawberry Upside Down Cake

Reviewed: May 29, 2010
Made as written. Warm or cool, taste is really very good. Definately nothing to look at. Serve it to someone on a plate with cool whip, whipped cream, or ready whip, looks much nicer. Will make again as written. I forgot about the marshmallows being in the dessert, never noticed them.

Old Fashioned Potato Salad

Reviewed: May 29, 2010
Made as written, very good! I think the potatoes were a little under cooked. I like them firm, but they were a bit under cooked. The picture looks like a white dressing, it is yellow. Will make again with a little more mayo.

Dad's Asian Slaw

Made as written. Loved it. The ramen noodles really should be added with the liquid and seasonings as stated. If you want "crunchy" add some of the toasted almonds and sunflower kernals just before serving.

Black Magic Cake

I really love having all the ingredients on hand. No going to the store. Buttermilk=1 T lemon juice + milk to = 1 cup. Always have left over coffee in the morning. Really good even without icing. Tender, moist, and flavorful. Made it in 9x13 pan. Nice recipe!
