Gluten-Free Pie Crust with LIBBY'S® Famous Pumpkin Pie Filling

We all had a good laugh tonight ... the crust was nearly impossible to cut. My good-natured hubby said it was like hard tack. I'll go back to my stand-by GF pie crust recipe that's indistinguishable from regular crust.

Apple Pecan Cobbler

NOT your traditional cobbler! Omitted pecans in apple mix. Used walnuts instead on top of cake. Next time I'll add a streusel topping. My husband said, "Ilove apple cobbler." I responded that it was really more of an apple cake. His response? "Then I love apple cake!"

Key Lime Pie VIII

My store-bought crust was in a million pieces when I got home. So I piled the filling high into 5 beautiful crystal wine glasses and topped it with whipped topping, a little bit of the crushed shortbread crust, decorated it with a slice of lime of the edge and it was beautiful! Made it exactly as printed -- it's tart-tart-tart ...and great-great-great! I'll make it again soon!

Hawaiian Millionaire Pie

If you use a homemade 9" pie crust it fills it up and mounds just beautifully. I added extra cherries and walnuts to the top and shaved a little chocolate on top for decoration. It's very rich so cut it in small pieces! If you're really into "death by sweetness" drizzle a little chocolate syrup over the top when you serve it! It's delicious!

Caribbean Sweet Potato Salad

Cooking time for russet potatoes WAY too long. I thought it was too long but did it anyway, and they turned to mush, so I had to start over with the russets. I would cook the russets and sweets together for no more than 15 minutes total time. It's an interesting recipe.

Strawberry Spinach Salad III

Such a light and refreshing salad ... BUT the dressing has TOO much vinegar for the sweetness of the fruit. I added 1/4 c fresh raspberries and used bottled raspberry dressing instead.

Italian Vegetable Soup

Stout, hearty soup ... was so thick and flavorful that I didn't bother to add the macaroni. It was GREAT! This will become a staple in our "soup-once-a-week" menus.
