Meaty Stuffed Pepper Casserole

used 3 cans tomato sauce--no soup, one can diced tomatoes, chopped red and yellow pepper--no green. Put cheese on last 10 minutes. Didn't get to take any in for my lunch because it was all gone!

Carrot Salad

What a great way to change up carrots! I didn't add salt or pepper. Craisins or raisins could have been good, but we all had seconds of just the apple with carrots and the honey/lemon juice dressing. Some sprinkled almonds on top and some left it plain. Will make again

Spicy Pumpkin Chili

for my own notes, use extra 1/2 beef. 3 of our homegrown hot peppers and 1 1/2 Tbs chili powder is too much. I do rinse beans to get rid of some of the sodium. Add low sodium beef broth and some water to thin out. Like the pumpkin. Hubby loved it but too hot for me even with dollop of sour cream.

Smoked Salmon Spread

We had smoked trout, didn't have Worcestershire sauce, still amazing. 3 yr old cleaned the bowl. Oh, and I substitute horseradish for green onion.

Garlic Herb Grilled Pork Tenderloin

cut pepper to 1 Tbs, still too much. 1 tsp salt. used 2 Tbs olive oil and 2 Tbs white wine. marinated a couple hours. 20 min on the grill. Moist and tender.

added small onion to beef, didn't have tomato soup, used small tomato sauce and tomatoes with green chilies, shredded cheese, 1/4 cup brown sugar, 1/3 cup sour cream, no salt. Yummy

Pumpkin Black Bean Soup

pureed 1 can of beans and tomatoes, added some jalepeno peppers and cumin. Low sodium beans, broth, no added sugar. My husband wanted me to leave out the pumpkin but I wanted the added fiber so left it in, he still had 2nds so he must have liked it.
