African Curry

Super good! A nice, versatile stew. I made some changes for what I was in the mood for. I added sweet peppers, whole habanero with holes poked in it, curry powder, chicken instead of garbanzo beans (dietary issue otherwise I would have kept the garbanzos), and added some brown sugar and coconut. Kept all other ingredients and seasoning the same. This will stay in regular rotation due to ease, taste, versatility, and healthiness.

Cabbage Roll Casserole

This was awesome! Didn't change much to it - added a little bit of oregano and balsamic vinegar to the meat, and used 1.5 lbs of meat instead of 2. It was soooo easy and delicious, I'll definitely make this again.

Black Pepper Beef and Cabbage Stir Fry

If you're looking for a quick and tasty meal, this is it! I was pleasantly surprised by how delicious this was, and my husband has deemed it regular-rotation-worthy. I made the following tweaks, in case this inspires anyone: Used black garlic instead of white garlic (gives it a sweet smoky kick), added two teaspoons of vinegar for a little bit more acidity, and added some oyster sauce as well as soy sauce. We absolutely loved the cabbage and pepper, it almost tasted like a hamburger stir fry somehow. Thanks for sharing!

Bacon Risotto

This was AWESOME! Yes, we made some small tweaks, but like others, as a decent kitchen cook, I always make small changes according to taste. In this case, I saved the bacon grease and cooked the onion and garlic in that instead of butter, added some white wine with the chicken stock, added some garlic salt, and a tablespoon of truffle oil along with one tablespoon of butter. This was my first time making risotto and I'm SO pleased with how it turned out. My husband was amazed at how good it was, too. It's going into the rotation for sure!

Greek Penne and Chicken

This was sooooo good! I made a few changes that I thought sounded good - I added some kalamata olives, olive oil instead of butter, twice the amount of feta, and used marinated artichoke hearts. Also, since I am picky about chicken I baked it in the oven and then shredded it into the pasta/veggies mixture at the end (I think baking makes chicken more juicy vs. pan-frying). I also added some extra olives and raw red onions when I served it. I really recommend the kalamata olives because they add a salty acidity that really tastes great with this dish. Thanks for sharing, my husband has insisted that this goes into the "rotation!" :)

Delicious Ham and Potato Soup

Great recipe. My only complaint was that it was too salty, but if I was cooking it instead of my (wonderful, generous) husband, I would have tasted it before adding the second tablespoon of bouillon and the 1/2 teaspoon of salt, but dear husband likes to follow directions precisely. Otherwise it was DELICIOUS and a fabulous way to use up the leftover Easter ham. He also added some leeks in addition to the onion, and they went very well with the soup.

Thai Pork Fried Rice

Ground Chicken Stew

Thank you for sharing a unique spin on stew, something different when you're sick of the same old beef or chicken stew. I used your primary ingredients (veggies, ground chicken, spices, cook time), plus I added a few spices according to my own tastes (chinese five spice, fish sauce, bay leaf, touch of sugar, lemon juice, and extra curry paste). Overall it was tasty and healthy, served over some white rice. I will probably be making this again when I'm looking for something different.

Super-Delicious Zuppa Toscana

Great recipe, although I did add some of my own tweaks. I used kale like others suggested, less chicken broth, and added some ingredients: fennel seed, balsamic and red wine vinegar (added a lot of needed zip), and pecorino romano. I also steamed the potatoes separately while cooking other ingredients to save time. Very good, I will make it again!

Chef John's Stuffed Peppers

WOW! I am not normally a fan of stuffed peppers but these were AMAZING! We made these because my husband loves stuffed peppers and I thought these sounded like a recipe I could enjoy, too. My husband made them and followed the recipe exactly (we used pecorino romano which does make a difference), and even as a novice cook he found the recipe very easy to follow. He felt like a gourmet chef after following your recipe and listening to me rave about how delicious it was. Thanks, definitely making these again!

Turkey Cheeseburger Meatloaf

This was AWESOME! Followed this pretty closely except I added some sriracha to the sauce and used about 1/3 cup of regular breadcrumbs. My husband said this was the best meatloaf he's ever had. We will be making this again for sure. We served it with baked potatoes and zucchini.

Beef Tips and Noodles

This wasn't too bad. We followed the directions pretty closely but we put it in the slow cooker. Next time I'd add some sour cream or milk or less water or something. My husband enjoyed it a lot, and I thought it was just ok... 4 stars since husband really liked it and it was very easy to make.

Quinoa and Black Beans

Mmmmm mm! This one surprised me... totally delicious! I ate it as a side dish with steamed salmon, but it could have stood alone as its own dish. I changed a couple of small things out of what I had on hand... I didn't use frozen corn (didn't have any) and added a can of rotel... the entire two cans of black beans was a TOUCH too much for me, so I added a can and a half. I also used chicken broth instead of vegetable broth because that's what I had in the pantry. OH and I used two shallots instead of one onion. I absolutely loved it and plan on making it frequently when I need a quick healthy meal. Thanks for sharing!

Asian Chicken Salad

Thanks for sharing this recipe! I followed the recipe for the most part. However, I just purchased the La Choy fried rice noodles instead of cooking my own for ease. I also added a few things: mandarin oranges, cucumbers, shredded carrots, and added sliced almonds to the sesame seeds when I toasted them. I also added some ginger powder to the dressing and used sesame chili oil instead of sesame oil (I probably won't do that again since it was a tad too spicy). Lastly, as I frequently do with weekend salads, I bought a rotisserie chicken and chopped that up and tossed it in the salad instead of cooking my own. Leftover chicken or freshly cooked chicken would have been just as good. This was a lovely Sunday summer night dinner for the hubby and me. He said it was the best salad I've made yet. I will definitely be making this again. Thanks!
