Chicken Stir-Fry

Boilermaker Tailgate Chili

STOP LOOKING! This is the best chili recipe! The modifications I made were only because I didn't have a couple ingredients so I substituted, and personally I think it turned out to my advantage!! I fried 4 strips of hickory smoked bacon and crumbled it up, instead of using bacon bits. I used chunks of steak meat, cut in thin strips instead of 2lbs of ground, because I only had steak/stew meat. I will always use steak meat anyways- it was delicious, the meat was falling apart, and it made the chili chunkier! Instead of Italian sausage I used a yummy hot sausage, cut into chunks. I fried each of the meats separately before throwing them in the crock pot, draining the fats. I tossed the steak meat in garlic powder, salt, and flour and browned it in a pan. Then, I used wine instead of beer to clean up the pan of all the flour and spices that were stuck and poured it into the crock pot. I also added at the very end, 2 tablespoons of cornmeal, because I like my chili thick, and it looked a little soupy before I did that. My husband came home from work, tried a spoonful and said, "I want this for dinner tonight!" I tried telling him we're supposed to eat it the next day, but it was so delicious he wanted it right away!! Still, we have plenty leftovers for tomorrow, and by all the reviews it's supposed to be even better!! I can't imagine that! My husband says it's a keeper and he wants me to enter it in this years chili cookoff! Thank you so much for sharing this wonderful recipe!

Beef and Bean Chimichangas

These were super yummy! The only thing I did different is I fried them in a pan with a little butter. They were crunchy and yummy. I tried them in the oven the first time I made them and they were just ok. Fried in a pan with a little butter really made a difference!!

Awesome Slow Cooker Pot Roast

Simply delicious- what more can I say? All I did different is take the roast and season it with garlic and ground pepper, then covered it in flour and fried it in a pan until browned. There was no excess fat, since it was a lean roast and I trimmed the fat. Then I took a little bit of red wine to clean up the pan and poured the juices into the crock pot. Followed the recipe the rest of the way. Scrumptuously yummy!!!

Linda's Lasagna

This was delicious! I used seasoned tomatoe paste, for more flavor (italian), and also seasoned tomatoes, and in addition included the seasonings specified in the recipe. I used ricotta instead of cottage cheese, only because I didn't have cottage cheese. I doubled the mozzarella cheese, just because I LOVE mozzarella! Added extra water to the sauce, and I'm really glad I did because the noodles soaked it up, and if I hadn't it would have been a little dry. My husband took leftovers to work for his lunch, and still wanted more when he got home for dinner!! Yummy! Thank you, Linda, this one's a keeper!

Red Garlic Mashed Potatoes

I followed this exactly except for the sugar- that just sounded weird, and judging by the other reviews who ruined their potatoes- I'm glad I skipped the sugar!! However, I followed the recipe and added a little more garlic than it says, and they were wonderful!! My husband kept eating them, and even my 1 year old LOVED them! They were soooo creamy!! Yum- this one's a keeper!

Foolproof Rib Roast

I was so disappointed about ONE thing- I kept scrolling down reading review hoping someone would mention if rib roast is supposed to be cooked covered or uncovered. I could not find any clue, so I began cooking it covered, then went to another help site and found out you NEVER roast prime rib covered!! Arghhh! I had to open the oven to take off the cover halfway through the cooking process which defeated the whole "secret" to this recipe. It may be common sense to an experienced cook or to those who have done this before, but an ESSENTIAL piece of information to someone who is doing it for the first time ever! I don't know know if I ruined it...we'll see. I changed my rating to a 5 star, because in spite of the little problem I had, the roast turned out SUPERB!! The only other changes I made was to rub it with Montreal Steak Seasoning, and it was so juicy and tasty! Keeper recipe!

Quick and Easy Brownies

I added chocolate chips, walnuts and decreased the flour to 1 cup. Used half white sugar, half brown sugar. These were super yummy; kinda in between cake/chewey brownies. I like that they call for cocoa instead of melted chocolate- less mess. Great base recipe- the possibilities are endless!!!

Chicken Fettuccini Alfredo

WOW!!! This was absolutely wonderful! As another reviewers husband said, "Beats Olive Garden!" I forgot to add the tomatoes at the end, but everything else I followed exactly, and I usually change stuff. Glad I didn't this time! It was wonderful just like this!

Minestrone Soup I

Yummy! I used kidney beans instead of cannelli, and added a can of garbanzo beans. I also must've chopped the vegetables finer than the author, because my cooking time was only 30minutes simmer/ plus 20minutes after adding the macaroni. I also added more chicken stock, tomatoe paste, carrots and celery than the recipe called for, because I like it thick and chunky! It turned out delicious! The possibilities are endless...

We loved this! I took others advice and doubled the soup/sauce ingredients. I also substituted milk for the wine, because I could not find a corkscrew! It turned out YUMMY! Harvey said it was a keeper....

Slow Cooker Chicken Taco Soup

I have to say- I added sour cream, a blend of mexican cheeses and crumpled Fritos to the soup as garnishes, and it made ALL the difference!! I didn't even mind the beer (couldn't really taste it at that point)! I had to change my star rating from a 4 to a 5. I love this recipe now, and I will definetly make it again. The possibilities are endless, but I will certainly use chicken broth next time.

Easiest Pot Roast Ever

This is one I use over and over! I use extra veggies, just because I love them. I add extra broth instead of water and brown the meat in spices and flour before putting it in the crock pot. The remaining flour and spices that are stuck to the pan I remove with a little red cooking wine, then pour the remaining mixture over the meat in the crock pot. Absolutely wonderful!!
