About this Cook
I love Jesus Christ, because "He loved me first", and He is the most important One in my life, so I mention Him above any other thing that concerns me. I love reading the Bible and getting to know Him (it's the best way to know HIM). I haven't known Him all my life, I used to be in the same category as thousands who misunderstand Him. The greatest joy in my life is discovering how He is more wonderful as I know Him more. I just got married in Feb 08' so my life has completely changed. I used to be the happiest single girl you will ever meet, but now I aspire to be the happiest married girl you will ever meet!! I love arts and crafts, I have a craft room that looks like a mini store. My main craft is card making and scrapbooking, and all other sorts of paper crafts. I love creating while my husband plays/learns guitar. The kitchen has become my "second craft room" as I love to experiment there!!
My favorite things to cook
I love trying new things. I have Italian, All-American, Thai, and Mexican cookbooks and recipes. Since I discovered "AllRecipes" though, I hardly ever see a need to buy a cookbook. I rave about this site and suggest it to everyone I know!! My husband and I both love all kinds of food.
My favorite family cooking traditions
Mexican food is our specialty, but my whole family cooks with the "a pinch of this, and a pinch of that" method! It drives me crazy because I try to re-create what my mom has done, and it's through trial and error. She has tried to give me "recipes", but they are described with "a handful or two of rice", "a pinch of this seasoning", etc...She is a wonderful cook, and so is my dad. They have a lot of recipes they created on their own. As soon as I get them I will try and post some!
My cooking triumphs
I was a fast food/restaurant junkie until I got married in Feb 08'. I discovered, after much prayer, that God could almost instantly give us a new gift/talent out of the blue, if we ask! I thought I would hate cooking and the opposite is true! I absolutely love trying new recipes, and God has blessed my desire to please my husband with delicious meals. He has loved absolutely everything I've made so far, and I've tried new things at least 2-3 times a week, unless he has a special request. Some of our favorites are Baby Back Ribs, Chicken Marsala, Mexican Lasagne, and my Spaghetti is a little unique, but sooo yummy. Learning and loving it!!
My cooking tragedies
Years ago, I tried making a potatoe/beef pie, and it turned out horrible. I literally cried, because I wanted to impress and surprise someone. Years went by without me trying to cook anything new again. In fact, until I got married, I hadn't cooked in years, except for basic things! I guess "prayer and love" were the secret ingredients, because all of a sudden I'm fearless, and have tried new things almost every week. My husband loves it!!

Grilled Chicken Salad Sandwich
I make this all the time, just like this recipe except for sliced almonds instead of cashews and not so much mayo. It's DELISH!

Mongo Guisado (Mung Bean Soup)
This is pretty close to the recipe I got from my mother in law! The only difference is she doesn't mash the beans. It's served over white rice. Yummy!

Pasta Bake
Yummy! I substituted the mushrooms for butter sauteed zucchinis, just because I love them. Added chopped garlic, garlic powder and the sauteed veggies to the meat mixture. Mixed the cheese into the mixture just as he said, but I also left enough for a bubbly cheese topping- I think that makes it look and taste even more appealing. Also sprinkled a bit of parmesan on top, just cause I LOVE cheese. This is a keeper.
