South Seas Chicken with Plantains & Roasted Pineapple Salsa

I have read all the reviews for this recipe, so here's a quick summary, with a few of my own notes: Reduce amt of chicken (submitter must have made a typo), use 1/2 cream of coconut and 1/2 coconut milk in lieu of condensed milk, add coconut flakes to the cornflake mixture (may also use panko bread crumbs). Substitute pineapple juice instead of lemon juice (it's the perfect compliment) and add the juice directly to melted butter. Last but not least, I personally recommend using plantains in lieu of bananas - you're guaranteed not to have mushy results as some reviewers have reported. Frozen plantains are available in your grocer's freezer and may be added to the chicken 1/2 through the allotted baking time. If you think it sounds like an interesting flavor combination -- I believe with the above tweaks it's truly 5-stars!

Grape and Caper Salsa

I did give this 5-stars but I adapted it slightly. I used 1 green onion (green & white part) in lieu of the shallot and instead of olive oil I used about 2 T (maybe less) of RF sour cream to bind it. I made sure to make it ahead of time to allow the flavors to set. I served it over grilled chicken and it was absolutely delicious!!

Grilled Tuna Steaks with Grape and Caper Salsa

I gave this one 4-stars because I adapted it slightly. I used 1 green onion (green & white part) in lieu of the shallot and instead of olive oil I used about 2 T (maybe less) of RF sour cream to bind it. I made sure to make it ahead of time to allow the flavors to set. I served it over grilled chicken and it was absolutely delicious!!

Delicious! I didn't sieve the tomatoes as I too (like many reviewers enjoy a "chunky" sauce) and I added some fresh squeezed lemon, approx 2tsp. It was lovely. BTW -- Try adding some fresh fish (ie Mahi) to the sauce itself and serve over pasta. Delish!

Begin with frozen brisket Cut fat off top Rub top & bottom with brown sugar -- don't be shy Meat should be fully covered with stout - 3 cans. Flip 1/2 way through cooking time (if available) T-minus 1hr, add carrots and parsnips Last 15-20 mins add Brussels sprouts Serve with mashed potatoes & parsnips

African Chicken Stew

**Add 4-6 pieces of extra dark chocolate (85%`cocoa) and you'll be pleasantly surprised the depth of flavor. Here are the other worthy notations: Used skinless bonesless thighs. Sweet Potato in place of white. Used RS Chix Both in place of water. Used chunky (SmartBalance) PB. Handful carrots. Skip the Cumin & Coriander -- replace with Garam Masala (approx 1tbl). Cinammon (approx (2tsp). Curry Powder (approx 2tsp). Paprika (approx 1tsp) 4-6 pieces extra dark chocolate at end till melted (85% cocoa). Yeah, when I see it all here in front of me I wonder if I am really rating this recipes 5-stars or my own. :-) But this recipes is more than an EXCELLENT beginning!
