About this Cook
I am a mother to 3 boys ages 11,5, & 5 months so I have my hands full pretty much ALL the time!
My favorite things to cook
I love making new recipes. My most challenging thing is finding foods my 5 year old will eat! Trying to lose this baby weight so I am eyeing healthier recipes most of the time!
My cooking triumphs
I just bought a convection oven!
My cooking tragedies
Learning how to cook at high altitude can be tricky when it comes to baked goods!

Blueberry Zucchini Bread
I have made regular zucchini bread which is always yummy but when I had a lot of blueberries on hand I found this recipe was worth a shot. I am so glad I tried it! The blueberries complimented the zucchini bread so nicely. I used 3/4 cup of oil and 2 cups of sugar. I also used 3 cups of zucchini and it came out perfect. Thank you for this yummy recipe, I will add this to my favorites!

Moroccan-Style Stuffed Acorn Squash
I was a little hesitant on trying this recipe because there was no meat in it. We had it for dinner and my husband and I LOVED it! The only change I made was i used a box of Toasted Pine Nut seasoned cous cous. It turned out FABULOUS! I will definately be making this again! Thank you for such a great recipe!!

Peanut Butter Cocoa No-Bake Cookies
I am sure these would have tasted fantastic had I not used steel cut oats. The bag said "Ready in 5 Minutes" so I assumed they were quick cooking! They smelled great but turned out awful! I did not have any quick cooking oats on hand so for my second batch I used Rice Krispies instead and they turned out delicious!
