Egg and Spinach Casserole

This is a very easy and good breakfast casserole. As other readers recommended, I added two more eggs and left out the butter. I also used half cheddar and half gouda cheese mix, because that is what I had on hand. It was fantastic! I think you could use any cheese combination to your liking.

One - Two - Three - Mexican Macaroni Salad

This is a great base recipe to adjust to your liking. I think using mayo is better if you plan to eat this for a couple days (it becomes less runny), but sour cream works well if you are going to eat it up right away. Instead of salsa I use petite diced tomatoes with basil, garlic, onion. I also add green onions, fresh garlic, and some hot sauce. Instead of olives, I like to add a little avocado and lime juice.

Heavenly Shrimp Dip

This is a quick and easy dip recipe if you are short on time. The last time I made it, I used wasabi cocktail sauce, and the kick really blended well with the cream cheese. Sometimes I use neufchatel cheese, for a lower fat option.

Best Ever Hot Artichoke Dip

This dip goes quickly because it is so good. I've been making this for years, with several variations. The key is to use good parmesan cheese. I like Trader Joes freshly grated parmesan. Sometimes I add chilies or sun dried tomato for a little kick, and I always add fresh garlic.

Cheesy Sour Cream and Salsa Dip

I read the variations before making this and used what I had around the house. This dip tastes much better than it looks. I used 8oz neufchatel cheese, 8oz light sour cream, 1 cup white English cheddar finely shredded, 1 can rotel, 1/2 - 3/4 packet of Uncle Dan's ranch dressing dry mix, green onions and fresh garlic to taste. This was a very easy recipe and quite the crowd pleaser. Can be made with many variations to your liking.
