Ground Beef Enchiladas

I made these with cream of mushroom and sour cream instead...I know I know, I changed the recipe. These changes allowed for a nice sauce inside the enchiladas. Although these enchiladas were decent the first day I cooked them, they were EXCEPTIONAL two days later after the ingredients had a chance to meld. I will be making these again.

Annie's Fruit Salsa and Cinnamon Chips

This recipe was so simple and delicious! I used the required apples, kiwi, and strawberries, but raspberries were expensive, so I used apricots instead. Next time, I would add only 1 Tablespoon of white sugar to the fruit mixture since the chips are so sweet on their own. I did like the juice the sugar creates, making the fruit mixture more salsa-like. As for the tortillas, only one cup of cinnamon sugar was needed. These could be a great snack on their own! Great recipe!

Baked Ziti I

Awesome, easy recipe. I found that the sour cream / mozzarella layer really resembled ricotta cheese. This is basically like a semi-homemade lasagna-type dish.

Vinegar Cookies

These weren't quite what I expected them to be. They did not rise very much, but that may have been because I couldn't find my baking soda, so I used baking powder (I don't know what the difference is). I only baked them for 10 minutes because my oven is hotter than most. I can't imagine adding chocolate chips or nuts to these because they spread and flatten so much that it would be difficult to hold any cookie add-ins. Even though they weren't chewy in texture and were somewhat flat, they had a very good taste and were very addictive! I would call these cookie crisps rather than simply cookies.

Mock Apple Pie

So, I made this recipe this weekend because it intrigued me. It was great to see my father's reaction when I told him it wasn't apple pie, but cracker pie! It was a great experiment, but really nothing more. After being in the refrigerator overnight, the filling thickened up to look even more like apple pie. It tastes like a decent pie, but I think the topping was a little too salty with the additional Ritz crackers. I would recommend making another streussel topping or adding a top crust instead. After the first piece of "apple pie," I could not eat anymore because the thought of cracker pie was somewhat sickening. It is a great joke to play, however, and it may be a great gift to give unexpecting relatives.

Good Old Fashioned Pancakes

I give these pancakes a 5 because they were the fluffiest pancakes I have ever made myself! I did cut back on the salt, as recommended by other reviews. Depending on how you like your pancakes, you made need to add a little more milk. The measurements here require enough milk to make a thick batter. I like my pancake batter to be medium thickness, so I just added milk by eye. Great recipe!

No Bake Cookies III

I, like many others, did not have cookies come out of this, but had "globs" instead. The globs did, however, taste very good. They may not have set because I used skim milk and I Can't Believe It's Not Butter. Maybe the minute was not enough to boil the chocolate mixture. Personally, you get the same great taste from a "puppy chow" mixture made with chex mix, chocolate, and peanut butter. That recipe is much easier and has an easier clean up.

Cheddar Bacon Hamburgers

Too much horseradish! I was skeptical about the horseradish considering its strong taste, and not without reason because the horseradish overpowered these burgers. Make sure you are a big horseradish fan before trying these! I only cooked a pound of these hamburgers, thank goodness. I would advise toning down the horseradish for just one pound of hamburger. My hamburgers also turned out to be more of a meatloaf texture instead of a hamburger texture, which is what I was expecting. Will not make these again.

Herbed Chicken Nuggets

These Chicken nuggets were great!! The only change I included was to add a little Parmesan cheese to the mixture to add some zing and salt. Great recipe! *Update* I have made these several times now, and I wanted to try freezing them so I would not have to go through the hassle of making them from scratch again. Even though these chicken nuggets are great, moist and juicy, when they are fresh, they are very dry when they are baked again. I would not recommend freezing them.

Caramel Popcorn

This was pretty tasty without going in the oven (I was too impatient to wait). The caramel had a great taste even though I cut down the butter. My only complaint was that the caramel was EXTREMELY chewy after it cooled, almost too hard to eat. This might be a result of not baking the popcorn in the oven. Because of this reason, I would recommend cooking in the oven (I will try this next) if it is going to last though the night.

Oatmeal Carmelitas

These were very very good. I only doubled the crust/topping ingredients and added a whole jar of caramel ice cream topping while eyeing the chocolate. These came out more like a chewy cookie on the bottom/middle, mainly due to the caramel topping. I think I did add too much chocolate which took away from the caramel flavor. The top was a little disappointing because it was WAY too crumbly, but I'm sure that could be changed easily by incorpating the butter more. Overall, these were really chewy and chocolate-y, two things you can't go wrong with.

The chicken came out really moist, but I was not a fan of the filling. If you are not a fan of spinach, you will not like this. I did not put that much spinach in there, and my roommate loved it. It was not my cup of tea though.

Slow Cooker Chicken Taco Soup

This was a good, cheap recipe. It would be easy to make a lot for a lot of people, and it really is a no-hassle recipe. I wouldn't make this to impress everyone, it seems more like a staple in most people's kitchen rather than a treat to dazzle guests.
