About this Cook
I am a mother of two very picky kids. One teenager who had decided not to eat vegetables anymore. My other a 5 year old who is allergic to dairy. This creates quite a challenge when preparing meals. I am constantly tring to learn new ways to substitute items for dairy and still make the recipes work and taste great.
My favorite things to cook
I love eggplant and love the different ways to make it. I also love to make soups and try new recipes all the time. I also love to bake and try to make it a tradition to cook with my children and create lasting memories.
My favorite family cooking traditions
At Christmas we have specialty dishes that have been handed down throught the generations and that makes it very personal. We also have an outrageous carrot cake that we always make a decorate for family weddings.
My cooking triumphs
I love taking a recipe and making it my own.
My cooking tragedies
Don't you just hate it when you have prepared the same dish multiple times and it always comes out great until you try to cook it for someone and impress them and the whole thing comes out wrong. How do you figure?

Apple and Spice Pork Roast
I thought this was very easy and very tasty! I usually put it in the crock pot and just let it cook. My son is not fond of all the cloves but I love it and I always double the sauce. Great recipe and great comfort food! I usually serve with a side of rice pilaf!

Juicy Thanksgiving Turkey
This was absolutely the best turkey I have ever had! It will definitely be my holiday turkey recipe from now on. My son loves it so much we make it once or twice a month. It it extremely easy and so tender. I didn't even need cranberry. I did make some adjustments to it though. I brined the turkey the night before (rub with salt and place in water overnight in the fridge). I also used pink champagne which gave it a wonderfully sweet taste. I didn't have oranges so I squirted the inside with lemon juice for the citrus taste and added chopped carrots and apples in the cavity. The apples absorbed the wonderful champagne flavor! So good! The gravy is fantastic! I also cooked it in the roaster oven (15-17 per pound) so that the house wouldn't get hot and left the oven free for other things. I would like to add that I do not like champagne as a drink because of the flavor and I still LOVED this!

Neat Sloppy Joes
This was excellent! I am very particular with ground beef and this was definitely a crowd pleaser. I followed the recipe as written but browned the meat, celery, onion and chopped garlic together instead of powder. Then removed the meat and made the sauce. I didn't have tomato soup so I used tomato sauce. I used all of the ingredients and added 2 drops of liquid smoke and a dash (1/4 c) of BBQ sauce as suggested in another review. I simmered 5 minutes then added meat mixture back and served. Excellent!
