Briam (Greek Mixed Vegetables in Tomato Sauce)

I was looking for a Greek sauce to go over baked meatballs that had feta and dill in them, so I adapted this and it was delicious! I only had fresh mint handy (snipped it off the new plant on my windowsill) so used a lesser amount of dried other herbs. Accidentally forgot the garlic and parsley, but dried parsley doesn't have a lot of flavor anyway. I only used 1 Tbsp capers, and used 2 cups of canned tomato sauce instead of the fresh tomatoes to make it quicker. Definitely a keeper!

Corn Pudding I

This dish really hit the spot! My changes were only because I didn't have on hand the original items: green pepper, Mozzarella cheese, dried parsley (1 tsp), 2 whole eggs, no chips on top.

Tofu Fudge Mocha Bars

This turned out surprisingly well. I made a few alterations after reading reviews. I blended the tofu, oil and sugar in the blender before stirring it into the other dry ingredients. I used half white/half whole wheat flour, only 3/4 c cocoa powder, and an instant coffee mix that includes sugar and creamer. I cut the sugar down to 1/2 c white and 1 scant cup of brown. I don't like real sweet desserts, but it could have been a bit sweeter so I'll add more next time. Baked in an 8x8 pan for 40 min at 350. The result was a thick brownie. My husband thought it was pretty good. A good way to use tofu if you don't like to eat it in savory dishes. I couldn't taste it at all.

Herbed Chicken Nuggets

5 stars for taste! Even my 2 yr old who doesn't usually like chicken ate these. 4 stars because I had to double the amount of breading and still had just barely enough, even though I only used 3 chicken breasts. Could have used just one egg because I had a lot left over. I changed a couple other things as well. Used 2/3 c bread crumbs, 3 Tbsp flour, 4 Tbsp parmesan cheese for breading, subbed 1 1/2 tsp Italian Seasoning for the separate herbs, and omitted red pepper. Served with Yummy Honey Mustard Dipping Sauce on this site. As my 3 1/2 yr old says: 'Licious!

Garlic Potato Wedges

This was a big hit with my husband and Chinese guests alike. I used a dried rosemary, and a little less than would normally be substituted for fresh. I also pressed the garlic and mixed it in with the potatoes before baking, and baked longer until they were crispy. I used a dab of honey instead of sugar in the dressing, and baked another 10 min after stirring in the dressing. Will definitely make this again!

Peanut Butter Chicken

I was really uncertain about mixing tomatoes with peanut butter, but this is a winning combination! I'm adding this to my regular menu rotation. I did put in less peanut butter than called for, and I think I'll try adding peas or another veggie that I have on hand next time just because I like experimenting.

Mexican Orzo Salad

I took this to a potluck with Chinese friends and they all loved it since it was a different flavor than they usually get. It does make a lot but the bowl was empty when I took it home! I didn't have yellow peppers so just skipped them. I used olive oil and stirred it into the pasta before adding anything else so it would be easier to mix in the other ingredients. I gave this 4 stars because it seemed a little bland. I added a couple teaspoons of spicy mexican chili powder and a little cayenne which gave it just the punch it needed. As others suggested, I made it the day before so the flavors could blend better. I'll definitely make this again!

Chicken Cilantro

I have to give this 4 stars because I altered it quite a bit. My blender is broken so I just added crushed garlic and chopped cilantro after sauteeing the onions and chicken. I also added some red pepper flakes to spice it up a bit and then, because I wanted more of a one-pot meal, I added 1/2 c corn, about 1 cup black beans and a can of chopped tomatoes. I served it over noodles since I was out of rice. My husband and kids enjoyed it so that confirms that it's a keeper!

Grandma's Chocolate Pudding

I think the amount of vanilla should be 1 tsp, not 1 Tbsp. I substituted mint extract instead of vanilla and used 1 Tbsp without thinking it through. It was a strong as eating toothpaste! I salvaged it by making another plain batch with 1 tsp vanilla to mix together. I also made several other substitutions: used whole wheat flour and rye flour, used half cacao and half carob powder, and used half sugar half stevia liquid. The plain batch turned out nice and chocolaty and plenty sweet.
