Briam (Greek Mixed Vegetables in Tomato Sauce)
I was looking for a Greek sauce to go over baked meatballs that had feta and dill in them, so I adapted this and it was delicious! I only had fresh mint handy (snipped it off the new plant on my windowsill) so used a lesser amount of dried other herbs. Accidentally forgot the garlic and parsley, but dried parsley doesn't have a lot of flavor anyway. I only used 1 Tbsp capers, and used 2 cups of canned tomato sauce instead of the fresh tomatoes to make it quicker. Definitely a keeper!

Corn Pudding I
This dish really hit the spot! My changes were only because I didn't have on hand the original items: green pepper, Mozzarella cheese, dried parsley (1 tsp), 2 whole eggs, no chips on top.

Tofu Fudge Mocha Bars
This turned out surprisingly well. I made a few alterations after reading reviews. I blended the tofu, oil and sugar in the blender before stirring it into the other dry ingredients. I used half white/half whole wheat flour, only 3/4 c cocoa powder, and an instant coffee mix that includes sugar and creamer. I cut the sugar down to 1/2 c white and 1 scant cup of brown. I don't like real sweet desserts, but it could have been a bit sweeter so I'll add more next time. Baked in an 8x8 pan for 40 min at 350. The result was a thick brownie. My husband thought it was pretty good. A good way to use tofu if you don't like to eat it in savory dishes. I couldn't taste it at all.
