Frozen Chocolate Chip Cookie Dough Balls

I used whole wheat flour (it's all I ever have around the house), so I had to add a few tablespoons of peanut butter to get the batter a little more moist. This is pretty good stuff!

Bacon Quiche Tarts

Used ham and cheddar instead of bacon and swiss. Made never fail pie crust instead of biscuits. Could have used a little less cream cheese in it and a little more egg. Will make adjustments to the next batch. Overall a good breakfast/brunch/snack/light dinner! Took an hour to make a dozen...but will probably be faster with practice. Baked 18 minutes at 350, then turned the oven off and let them sit for 10-15 minutes.

Tasty Tuna Burgers

Good way to use canned tuna. I omitted the chopped onion, red bell peppers, and celery. and included the green chile, onion, and garlic paste I made yesterday. I added more hot sauce, etc. Might want to add more bread crumbs and cook longer for a slightly tougher texture. Probably would bake well, but I like the sear on the oustide.

Caramel Apple Jam

easy, quick, and even though I didn't have nutmeg, I think it tastes pretty good. Perhaps a bit too sweet, but still good. The true test will be in a few weeks when we finish the leftovers and crack into a canned jar.

Easy Sugar Cookies

Bake for 8 minutes so the cookies stay soft. Make sure the butter is softened to practically mush. I used 1/4 less flour, and probably could have used slightly less.

They are similar to a dry snickerdoodle. I like the buttery, almost flaky texture, and the look very pretty after baking. My classmates approved as well.

Zippy Beef Bake

This is good enough if you're looking for a quick casserole dinner. I had to substitute a few ingredients (jalepenos for green chiles, yellow onion, cheddar...) but it turned out to be a fairly tasty rendition.

Zucchini Apple Salad

I added grapes and raisins as other reviewers suggested, but I changed the dressing and added a variety of mixed chopped nuts (hence the 4 instead of 5 stars). I used the dressing from Heavenly Zucchini Salad on this website and it was a refreshing flavor combination.

Cinnamon Bread I

The recipe worked well with whole wheat flour, but I did add an extra 2 tablespoons of milk (the vinegar trick is good!). I took another reviewer's advice and made extra topping; some was poured in the middle of the batter and some put on top. Also, I didn't have enough vanilla left, so I substituted some almond extract (which is pretty good - adds a little nutty aftertaste.)

Quick Quiche

We thought this was pretty good. I'm not sure if it is supposed to do this or not, but my flour sunk to the bottom and formed a sort of gummy crust between the bacon pieces...that's why its not a 5 star (we like crunchier crusts). Also, if your quiche isn't done when you pull it out (mine tricked me) then pop it in the microwave for a few minutes!

Unfortunately, I mismeasured my vanilla. Other than that, I think this is pretty good, but my husband thinks it is too bitter (perhaps because of my vanilla goof...)

Chilean Empanada

My husband lived in Chile for 2 years and has eaten a lot of "authentic" (for lack of a better word) empanadas. We liked these, but next time we'll go a little lighter on the raisins.

Italian Ricotta Cheesecake

It is an interesting dessert (in a good way). I mixed in some cocoa powder instead of the cinnamon, used splenda instead of sugar, and low-fat ricotta. Except that it was chocolatey, I think it turned out the way it was supposed to turn out.

Greek Salad V

A few small alterations: I had to substitute black olives and some shallots and green onions instead of the original ingredients, and I thought the recipe called for too much oregano for our tastes.
