P.J.'s Fresh Corn Salad

This really is an awesome recipe for summer when all you crave is something light, fresh, and refreshing. I love onions, but there are too many in this recipe. I recommend halving the onion and increasing the dressing slightly. Thanks for the recipe - I plan to freeze the leftovers and enjoy them this winter when corn is hard to come by!

Morning Glory Muffins I

These are absolutely fantastic muffins. I omitted the raisins, but otherwise followed the recipe to a T. Grating the carrots was a pain, but totally worth it in the end. YUM!

Creamy Artichoke Pasta

What a fantastic recipe! I think the addition of tomatoes really takes this recipe from good to great! I used 2 Roma tomatoes cut into grape-sized chunks and added them just before removing the sauce from the heat and adding the sour cream and cottage cheese. They gave the pasta more color and flavor. My boyfriend went back for THIRDS!

Actually Delicious Turkey Burgers

These really are surprisingly delicious burgers! I make a dozen and freeze the leftovers. They do freeze perfectly and are just as delicious later when thawed and microwaved. A+ recipe!

Black Bean and Salsa Soup

This is literally one of the easiest recipes I've ever made! It also happens to be really inexpensive and taste great! The *only* little changes I'd recommend are to triple the amount of cumin added and save some whole beans for texture. Five stars, for sure. Bravo!

Curried Egg-white Salad Sandwich

Really good and healthy - didn't miss the yolks one bit! The curry powder adds awesome flavor and the yellow color that normally comes from the yolks. I added a little chopped celery because I needed to use it up, and loved the crunchy texture it added. Enjoy this guilt-free egg salad sandwich...I certainly did!

Chocolate and Fruit Trifle

I made this for the 4th of July, so I used blueberries instead of kiwi fruit. I also used Triple Sec Liquor instead of orange juice, which gave the flavor more depth. Everyone loved it!

Garlic Chicken

Finding simple, great recipes is not an easy thing to do! This is the easiest chicken I've ever made, and it turned out fantastic. I used 5 large cloves of fresh garlic, smashed them with the flat side of a knife, and simmered them in the olive oil for about 5 minutes. When I read the recipe, I was unclear about whether or not to strain out the garlic before dipping the chicken into it. I ended up leaving the smashed garlic cloves in the oil, and some of the smashed garlic stuck to the chicken. This was a good thing, and the flavor was absolutely fantastic. Enjoy!

Tasty Chicken

This was really simple and quite tasty, as the name would suggest. I used one green, one red, and one yellow pepper instead of three green peppers. This made it really beautiful! Also, I added a little bit more soy sauce than the recipe called for. I will definately make this again!

Double Tomato Bruschetta

I love bruschetta, and had to try this one because of all the rave reviews! Overall, it was really nice. Fresh basil made a difference, for sure! I do have to say that I'm a huge garlic fan, and still thought there was too much garlic in this recipe. I used 3 rather large cloves. I would recommend using three small cloves or 2 large cloves. Otherwise, it was PERFECT!

After reading the other ratings, I chose to use 12 ounces of pasta. This was just the right amount. I used one can of tomato sauce and half a jar of spaghetti sauce. I added one clove of minced garlic and about 1/4 cup of chopped onions to the meat. Even with these additions, I found it a little bland. Overall, it was VERY simple to make and pretty tasty! I don't have any children, but would imagine that this would be a really kid-friendly dish!

Tantalizing Turkey and Blue Cheese Meatballs

I really liked these with a marinara sauce on spaghetti. When I tried to eat them alone, all I could taste was blue cheese. Next time, I will either use much less blue cheese or omit it altogether. The recipe was really easy to make, though!
