Zucchini Brownies

Reviewed: Jul. 19, 2005
So good!!!!! The batter will not be dry after you add the zucchini. The moisture comes from the zucchini. Do not add an egg if you want a moist, fudgy brownie. If you add an egg you will get a cake. I don't understand those that change the recipe and then give a bad rating. The only change I made is that I only added 1/4 cup nuts. Mine were done at 20 minutes. The frosting is excellent but they really don't need it. Thanks so much!!! A keeper!!!

Mayonnaise Biscuits

Reviewed: May 22, 2006
Very Delicious! This is more the texture of a light roll, than a biscuit. I did not have self rising flour, so I put 2 cups all purpose flour in a bowl, then took out 4 tsp. and then added 3 tsp. baking powder and 1 tsp salt. You must use real mayo, not Miracle Whip. Don't even rate the recipe if you use miracle whip, because the roll will not have much flavor. The batter will be sticky, so just use a dash of flour to help if need be. I used about 2 tbsp. of the mixture and just dropped it on the baking sheet. They cooked in exactly 12 minutes. So good!!!! Thanks!

Oatmeal Peanut Butter Cookies

Reviewed: Jan. 10, 2003
How could someone complain about this recipe? I am not a cookie baker novice, and these cookies were just beautiful!! I added some white chocolate chips. Other than that, I didn't change a thing. The oatmeal gave them a beautiful rugged texture, not to mention an awesome taste! And I don't know why some say this is salty, I can't even taste the salt. I have made another peanut butter oatmeal cookie from this sight which I thought was good until I tasted these. This is my new PB recipe!! I am taking these to a fellowship at church tonight. Thanks so much!

Carla's Fruit Dip

Reviewed: Jan. 8, 2003
I have made this twice. The first time I used the "Extra Creamy" Cool Whip. The second time I just used the regular Cool Whip. It was definitely better, creamier, and easier to dip the first time. I also used the strawberry cream cheese. Very good!!!

Fantastic! I made my own steak sauce using Worsteschire Sauce, ketchup and dijon mustard then added it to this recipe and it was great! Thanks!

This was really good and refreshing. I only had vanilla yogurt and DOLE pineapple/orange juice, so I used that. Thanks!

Sweet Potatoes and Apples

Reviewed: Jan. 24, 2003
This was really good. I wasn't sure if the sweet potatoes were supposed to be drained, so I left about 1/2 the juice and it turned out good. Thanks!

Green Sauce Enchiladas

Reviewed: Oct. 10, 2002
Yummy!!! I added more sauce and cheese. I also used Tyson's frozen pre-cooked fajita chicken that comes in a large bag. It was quicker and the fajita taste really added to it!

Quick Sunshine Cake

Reviewed: Oct. 3, 2006
I have always known this as a Mandarin Orange Cake. I only used an 8oz Cool Whip, which was perfect. I used french vanilla pudding and about half the crushed pineapple in the frosting. If you let this set in the fridge overnight, it will be the moist, wet cake that I believe some reviewers are expecting.

Blueberry Delight

Been making this for years. Love it! I usually just use a container of Cool Whip just to save time, but I know the the whip topping mix would taste better. Thanks!

Egg and Sausage Casserole

Reviewed: Dec. 29, 2011
This was really good. I didn't have any mozzarella so I just doubled the cheddar. I might leave out the oregano and try another spice next time just for personal preference. I had to cook it about 35 minutes. Thanks!

Easy Chicken Enchiladas

Reviewed: Feb. 27, 2005
Very delicious! I wasn't brave enough to try an 8 oz cream cheese (didn't want a cheesecake) so I only used 1/2, but next time I will try the 8 oz. I put taco seasoning on the chicken, only had black beans so I used that, and threw in some corn for color. I made it into a casserole instead of rolled enchiladas. Definitely a keeper. Thanks!

Tangy Honey Glazed Ham

Reviewed: Jan. 15, 2003
Good Heavens!!!!!! This was soooooo delicious! I was looking for a recipe that had a pineapple sauce to pour over the ham, but I was a little disappointed after I started cooking it and realized that it was more of a carmelized baste. I had my husband slice it and of course he had to sample it first. Before he even got finished slicing it, he said that he must stop and take some over to the neighbor. I then took a bite and loved it! It was very juicy and tender. We will definitely be making this again, but I think I will still try to find a pineapple sauce to pour over it. Thanks so much!
