Corn Tortilla Chips

I have been doing this for years - both with corn and flour tortillas. My family loves these so when I'm making something they aren't crazy about, I just make some of these and it makes the whole meal better!

Raspberry Fudge Balls

My mom made this recipe years ago - It has stayed in my Christmas candy collection since! I use very finely chopped pecans (almost to a dust). Roll the balls once, let sit for awhile and then roll again. We have one friend who insists on getting a whole batch for himself!

Italian Meatball Sandwich Casserole

WOW! I thought the cream cheese/mayo mixture might be a little strong but the smell from the oven was almost too much to wait for!! My family loved this and we were tempted to eat it all but managed to save some for leftovers - absolutely delicious and fairly easy. I didn't have any Italian bread as we live in a small town, but I used some sandwich rolls and it tasted great!

White Mountain Cake

I used this recipe for my Easter cake this year - it was so wonderful - not gluey like alot of white cake recipes. I used a butter and shortening mix cake frosting from Taste of Home - it was hard to stay away from!

Cinnabun Cookies

These cookies are absolutely delicious and so easy to prepare! The taste is wonderful - they are actually dangerous around our house as they are so hard to resist!

Daffodil Cake

I had alot of trouble getting the yolks to blend well with the cake flour and then when I baked it, the yellow part of the cake was very dense and dry. The white part was very good (angel food consistency) and the cream cheese lemon frosting was delicious. We dipped strawberries in the extra frosty - yummy!
