Chicken and Sausage with Bowties

I think Cheri826's input made this recipe good. I followed what they did (highly recommend that, especially the cream and cooking the sausage and chicken separate). I also added a bit of spice. Red Pepper gave it a nice bite. Not too much. Corn Starch was also a must. It's a good base recipe, but I think it definitely needs some alterations to really get it going.

Spicy Red Snapper

Excellent basic sauce for anything, really. I used it on Halibut as my fishmonger did not have snapper today. My wife loved it. My only change was the reduction of the chopped onion to one half rather than a full one - just looking at the quantity of each ingredient I thought that would be a good idea. Also added a handful of fresh oregano to give it not only a red pepper flavor, but a little herb as well. But I firmly believe if you cook it as recommended, it is brilliant!

Beef Marinade II

As with other comments, created a very tender steak, but lacked flavor other than the wine (which was very nice!) I agree - more soy sauce is probably a good idea. I also like the fact that it is quick - I don't always plan ahead well enough to wait 24 hours for my main course!

Pan-Poached Alaskan Salmon Piccata

Gotta give this a 5. Very simple, healthful, and tasty. I used a little white wine per one reviewer's suggestion. I also substituted multi-colored pepper corns for capers. My wife said "I didn't think you could get food like this unless you went to a restaurant!" Made it for a second time... it really is a hit! Christine L. has a wonderful and simple recipe here! I'm going to look at what else she has!

Marinade for Chicken

I can't give it 5 stars because this is my first marinade recipe, but I LOVE it. I continually use this as a "starting place" and modify it. Instead of Worcestershire sauce, I use Yoshida's Original Gourmet Sauce. I have also used lime juice instead of lemon (zingy!) and dried Japanese horseradish rather than mustard. In addition to dried parsley, I have also added basil and thyme. And it's not just for chicken! Worked GREAT with pork cutlets! Thanks for this one!

Savory Mushroom Sauce

I wanted to surprise the wife with something new and different, and this did it! Thanks for the great recipe. My alterations - used 3 cloves of garlic and 1 tablespoon of Basil, due to the "bland" comments. It came out pretty good! My wife had it over chicken, and I decided to try pasta. I think both dishes were a success, though I had to thin the sauce with some milk to make the pasta work - if you do that, I think you have a good pasta topping!
