White Chocolate Raspberry Cheesecake

This was a HUGE hit, both at home and at work. My coworkers loved the "oreo cookie" touch. It takes some time and is very rich, but if you like rich cheesecakes, it is worth it. I used 2 c oreo cookies minus the cream, 1/2c butter and 4 tbsp sugar...I baked just the crust for 10 minutes at 350. Lowered temp to 325 for the cheesecake. Choclate: used stovetop, much easier that way. Syrup: Used seedless raspberry preserve. Creamcheese/sugar: used 1 tbsp cornstarch, it prevents cracks, and added vanilla beans to the sugar. Used a bain marie (waterbath, used greased wax paper at the bottom of the pan before putting the crust, makes removal easier. Greased sides liberally, prevents cracking. (Wrap bottm and sides in foil before putting it in the bain marie). Cake was done at 50 minutes. Let it sit in the oven for 3 hrs till both the oven and the cake cooled down, and then in the fridge overnight. It was delicious. Btw this was my first attempt at a cheesecake and it came out perfect after the steps above...no one at work believed that I had never baked a cheesecake before!

Baklava

I have made it twice and it was a huge hit. I took a lot of suggestions from the other reviewers, made 1.5 times the sauce, cut the baklava 1/2 inch from the bottom and poured cold sauce on warm baklava. I also made the sauce ahead of time and refrigerated it. I used a light coat of butter for each layer of dough. This was so good! UPDATE: Made this a few more times and I barely used 1/4c butter. I toast the nuts in the microwave. I make the sauce and nuts 1 day ahead of time when I have people over, less work on the day itself!

Mom's Chocolate Chip Cookies

These are really good and the proportions of the ingredients are perfect. I used Ghiradelli semi sweet chocolate chips and they were great because the cookies were not overly sweet. I used 1/2c margarine and 1/2c butter to minimise spreading and they turned out very well. 10 minutes was the perfect baking time for my oven. I brought these to work and they were all gone by noon! This weekend I will try them with the cheesecake or white chocolate pudding flavour. I also think that there is a lot of scope for playing around with flavors...PB/butterscotch chips and caramel/cheesecake pudding etc...

Refreshing Limoncello Cake

If you like lemon, you will love this! I used sour cream instead of yogurt (the 8oz box). Sooo good! Used a 9inch bundt pan, the cake was ready in exactly 35 minutes! Served it with homemade whipped cream and fresh strawberries

Cajun Cake

I followed the recipe exactly and I did not care for it. The topping tastes good but the cake itself is so thin and hard that it doesn't feel like a cake at all.

Apple Betty

This was SO good! I have never made an apple dessert in my life, but I was adventurous enough to make it yesterday for a dinner party and everyone LOVED it. It was all gone in minutes! I took some reviewers' advice and reduced the sugar by 1/4 cup, used half brown and half white, and baked it for an hour. For those who have complained about it being too soggy, they should check the kind of apples that they have used. I used Golden Delicious, but I think Granny Smith or Cortland or Empire would have been good too. And I didn't slice them too thin. Thanks so much for this recipe!

Chocolate Cavity Maker Cake

This cake is AMAZING! I am not even a chocolate lover and I loved it! I brought it in to work today and it was all gone before the end of the day, and everyone asked me for the recipe! Thanks to all the previous reviewers whose suggestions I used - *Used only 1 cupe of Ghiradelli chocolate chips, *Left the eggs at room temperature, *floured the pan with cocoa, *used Baileys instead of coffee liqueur. Remember, the batter is going to be thick so don't panic, you aren't forgetting anything. Takes exactly an hour to bake. I used Betty Crocker's Devil's food cake mix and Jell-O choclate pudding mix. Baking it again tomorrow for a dinner party!

Corn Potato Pancakes

This was really good. I sauted the onions and corn with cumin for a bit and threw in some mashed potatoes. Also added some cilantro that blends in really well with the flavors. The proportions are perfect, thanks for a great recipe!

Kay's Spaghetti and Lasagna Sauce

Marinated Tuna Steak

This was really good! I made some changes to it and the blend of tastes was really great - I marinated 2 steaks, added 3 crushed garlic cloves and about 1/3rd cup chopped cilantro - skipped parsley and oregano. It was absolutely yummy, very succulent indeed!
