Coffee Icing

Excellent...except I wish I read the reviews before I made it. The consistency was too watery. I wound up needing to make more so I added more butter and a bit more sugar, but instead of adding liquid coffee I used some instant coffee with as little water as I could and added some unsweetened cocoa. I didn't melt the butter completely and I then refrigerated it for a little.

Leftover Chicken Croquettes

Really good recipe...read the reviews first! Especially cookingcutie's. I sauteed onions and a stalk of celery in margarine. Added flour then milk and broth to make a roux. I used delicious smoked/BBQ chicken that my husband made last night. I served them over mashed potatos and chicken gravy. Soooo good!

Broccoli Cheese Bake

Ok, so forgive me now but I don't measure and i use low fat versions of everything except the cheese. I took a bunch of reviews and mixed them up. So I used probably 1/2 the broccoli. I used probably 1/2 cup of margarine, melted it. I then added the onions and cooked them for 5 to 10 min till soft, then I added the flour to make a roux. Mix that up and added about 3/4 cup milk. Bring to a boil, and added cheddar cheese. Added about 1/4 tsp dry mustard and the salt. I skipped the egg because I realized I had a lot less time than I thought. (I didn't cook the broccoli first because I like it crispier than mushy) put it in a 8 x 8 pan and cooked till the broccoli was bright green. Sprinkled bread crumbs over top and cooked on 425 for another 5 to 10 minutes. Came out really good! Next time I'll use more broccoli.

Best Ever Jalapeno Poppers

It's funny because I don't follow recipes well, & I guess I've made these so many times already, I never noticed the double coating! Well anyway, I add about 1/4 tsp salt to the cream cheese mixture, and I only coat them in bread crumbs once. (also I use egg instead of milk). I bake them instead of frying them. I bake them on 400 for 20-30 min till golden. They are very time consuming to make. But my hubby begs for them at LEAST once a week! My whole family loves them. I also suggest wearing gloves to handle the jalepenos.

Pecan Crusted Chocolate Truffle Pie

Amazing! Made for the seder. Everyone loved it- it was a little too rich but still amazing. Made the crust the night before and left out at room temp. Didn't have brandy so substituted amaretto.
