About this Cook
I love to eat- but more importantly I love to eat delicious meals that are healthy and relatively easy to prepare. I mean who has time in their busy, modern lives to slave for hours in the kitchen? Not me. I'd rather clean the toilet (ha!)
My favorite things to cook
Vegetarian casseroles, one dish meals, pastas, soups, cookies, muffins, cakes, decadent desserts for special occasions.
My favorite family cooking traditions
Pot-luck dinner nights with friends, with themes being optional. Going out to great restaurants for inspiration and then copy-catting their dishes. I'm a foodgeek and I love to save a little $$$ here and there - what can I say, it's healthy for the diet and the pocket-book.
My cooking triumphs
A cozy dinner party for 5: roasted tomato cream soup starter, spinach-artichoke lasagna main, and apple-rhubarb crumble a la mode dessert served over the coffee table. *Note to Self* Purchase dining room table for new place. It's not like we're in college anymore, lol!
My cooking tragedies
Adding 1 cup of dried mint for a Moroccan Chicken Dish instead of 1 cup of fresh mint translated into a "Colgate fresh" dish for my dinner guests. Great for teeth and gums, not so great for the palate. The second was not using enough yeast to properly rise a whole wheat pizza crust AND using sugar instead of salt in the recipe. My lovely shrimp, pesto and sundried tomato toppings clashed with the sweet dessert-like crust.

Blackberry Cobbler II
Yummm! I mistakenly added ALL the sugar to the dough mixture and had to double the recipe in order to make it right, but even with extra sugar and some lard (I ran out of butter) the cobbler still turned out great. Definitely would reduce the sugar in berry mix by 1/4 c like another reviewer said. Will make again!

Dill Dip III
Quartered the recipe (for 2 people)so I used 1/2 c each of light mayo and non-fat sour cream. Also halved the seasoning salt to 1/2 teaspoon. As other reviewers suggested the flavors of this dip need a day to fully develop, DID NOT taste right the day is was made. Will make again!
