Real Strawberry Frosting

This was a really great find for me. My husband keeps going into the fridge and randomly scooping spoonfuls of the leftovers out. He hates frosting. But yet, he keeps doing this. That tells you how good it is. I didn't have 1 cup of butter, so I used 1/2 butter and 1/2 shortening. Didn't use as much sugar as is called for, but close - probably 1/2 cup shy. I strained the seeds out of the puree before adding it to the mix. Amazing how good this turned out!

Chorizo Stuffed Poblano Peppers

This recipe is really, really good. I made it exactly as written, then also a modified version for the kids, using ground beef instead of chorizo and sweet peppers instead of the poblano. A big hit for dinner!

Cabbage Ramen Salad

I had a recipe similar to this a long time ago, couldn't find it. But used this one to try to remember my lost recipe. It turned out delish. I used 1/2 head green cabbage, 1/4 head red, 1 medium onion, 2 carrots - all shredded in my food processor. For 'sauce' - seasoning packet from noodles (oriental flavor works best, but I only had chicken), 1/4 cup light olive oil, 1/4 cup rice wine vinegar, 1/8 cup soy sauce, 1/8 cup water, 2 Tb white sugar, 1/4 teaspoon sesame oil. Mix it all together. I tossed in some 'zingy currants' I had on hand from Nature Box - could use raisins, was looking for sunflower seeds, but all I could find was sesame seeds, so I toasted them and added that with the crunched up noodles to the rest of the salad. If you add a grilled, boneless skinless chicken breast, diced, you've got a one dish summer meal that's great - and leftovers are so yum.

Fish with Cucumber-Orange Relish

This is a really good recipe. I didn't have everything in the recipe, so had to substitute. Other reviews were very helpful in doing this. I used 1/2 of an English cucumber, about 2 tablespoons of vinegar; rice wine was all I had on hand. Only used 1/2 teaspoon of dill as we are not big fans - could have left it out. Added one tablespoon honey. Used equal parts fresh orange and fresh pineapple in place of the mandarin oranges. Salt/pepper/garlic powder on the orange roughy with a little olive oil spray and grilled it. The grill taste added a yummy dimension. I also had some red pepper hanging around in the fridge, so threw them on the grill as well. Nice compliment!

These biscuits are perfect. Just need to make sure you don't roll them/pat them too thin, and that your baking powder is fresh/hasn't been sitting in the cupboard too long. Thanks for the great recipe!

Dumplings

I must have done something wrong, since this recipe has gotten so many rave reviews...nonetheless - I attempted to make these as stand alone dumplings. The water boiled over and made a mess all over my stove and I was left with a mushy mass of yucky goop. Have to start over with a different recipe. I followed this one to the letter. No go!

Green Abundance

What a great, healthy recipe! However, I did notice some issues here. First, it took me 45 minutes to chop everything up, as opposed to the 20 minute prep time listed. Also, this recipe makes a LOT more than 6 servings! Still, it's a good recipe. I used chicken breast in place of the pork, and was generous with the spices and wine...came out tasting great!

Curried Tilapia with Mango Salsa

This is a very good recipe for tilapia when you're looking for something different. I agree that there was too much salt in the salsa. I used thawed frozen mangos to save time (they were already chopped) and left out the hot pepper (kids would not like). I also only put the curry mixture on one side of the fish before cooking, and that was plenty. I would definitely make this recipe again, it was very tasty and relatively easy to put together. I served it with saffron rice from this site; the rice was very good also and paired well with the fish. Substituting mint for the cilantro or in addition to sounds interesting...may try that next time! Thanks for the great recipe - taste buds super happy!

Katrina's Best-Ever Chocolate Brownies

Okay, these brownies haven't actually finished cooking yet, but my 4-year-old daughter and I felt compelled to rate based on licking the beaters. Mmmmmm.... Okay, now they're done cooking, and the final product is just as good as the batter. I did have to cook them 10 minutes longer. These are a nice cross between a cake-style and fudge type brownie. Super duper!

Chicken Crunch

What a great basic recipe, that can be changed up according to whatever you have on hand! I didn't have sour cream, so I used 2 oz. cream cheese, and 6 oz. skim milk. I also threw in half of a vidalia onion (my husband has to have onion in everything), half a package of mixed frozen vegetables I had left in the freezer, and some poultry seasoning. I didn't have any crackers, so I mixed the melted butter with some crushed up cornflakes and covered the top with that. I baked in a 350 oven for 40 minutes, because I figured that would help the added moisture of the onion and frozen vegetables to cook out, so as to avoid a runny sauce. This was very tasty.

To Die For Blueberry Muffins

I've tried this recipe twice, and both times the muffins rose up to high, the topping spilled out onto the muffin tin and made a big huge mess. The muffins taste good, but I would recommend filling your pan half way, instead of 2/3 full as the recipe states. I'm hoping the third time will be a charm for me! I did use frozen blueberries, and wonder if this may be part of the problem.
