Spinach Turkey Roll

My husband felt the need to open a bottle of wine to accompany this MEATLOAF! Who knew a pound of ground turkey could become something so AWESOME!! Tweaked the recipe a bit for what I had on hand: Quaker oats instead of breadcrumbs, no ground mustard- used sage. Excellent, I've already made it twice!!

Guinness® Corned Beef

I made this for St. Paddy's and was worried that it might be overpowering with the beer. At the first bit the whole table was silent, then my husband very quietly said "this is awsome". Great easy recipe. I did add the seasoning packet that came with the meat and I'm glad I did. Also, I used Smithwick's as most of my guests aren't huge beer drinkers. Fantastic!

Black Bean Brownies

My one year old son and I loved these, my 3 y/o daughter and husband wouldn't touch them. Definately adjust the cocoa to 1/3c and the coffee to 2 tsp.

Grilled Venison Backstrap

HOLY COW! Er...Deer! This is fantastic! It's amazing how bacon can totally transform any dish! Not a huge fan of venison, but my dad is an avid hunter so we end up with lots of meat. I was looking for something that would cut through some of the gamey-ness and this definately did it. It doesn't mask the flavor of the deer meat, but rather makes it WAAAY better! This will be a standard venison recipe from now on!

Hot Pizza Dip by 3-A-Day™of Dairy

Ok, I made this for a party and I didn't even get any of it! Everyone told me how great it was and I handed out the recipe to 3 people. A nice alternative to the standard Taco Dip. This dip goes great on the Garlic and Herb Townhouse Toppers.

Amazingly Easy Irish Soda Bread

Awsome! This was my first attempt at soda bread, so I had my husband grab a loaf of bread at the store as a backup. No one touched the back up!! This bread was crusty on the outside and soft inside. I did follow another reviewers suggestion and baked it at a lower temp (350) for a few more minutes.

Spanish-Style Quinoa

Very good recipe, it was nice and spicy but it needed salt! I also tossed some cooked shrimp in a tbsp of smoked paprika and added it to the quinoa at the end to warm it up and also a half a can of corn. Served it in green peppers (that I boiled to soften). Hubby loved it, definately will make this again!

Garbanzo Tomato Pasta Soup

Really good, healthy soup. I used light red kidney beans (just what I was in the mood for), and tossed in some squash and zucchini I had on hand. Also, because I love soup but hate the 1000mg sodium per serving, I used a sodium free boullion and added extra spice. Very good.

Cappuccino Mousse Trifle

Excellent!! Like a lazy man's tiramisu! Quick easy but very impressive. I used fat free, sugar free jello instant pudding and fat free whipped cream (2 16oz TUBS!). I would recommend letting it sit overnight so that the coffee really melds with the pound cake.

Lasagna Roll-Ups

I made 2 versions of this recipe, one as directed and a second using wheat pasta, cottage cheese for half the ricotta, and lots of veggies in the sauce. Both versions came out wonderful!

Blueberry Zucchini Bread

Excellent, I definately needed to add a little more bake time because I didn't drain the zucchini. Held up well to the low fat substitutions i made. Freezes very well!

Favorite Old Fashioned Gingerbread

I'm in the habit of substituting healthier ingredients and these came out fantastic! First I used 1C whole wheat pastry flour and 1.5C white; 1/4 dark brown sugar and 1/4 c Splenda; Sunsweet Lighter Bake in place of the butter and I cut the molasses back to just over 1/2c. Keep an eye on the bake time too. i used an 8x8 glass pan and they were done (almost too done) at 30 min.

Oatmeal Pancakes II

Ecellent hearty pancakes! I did the standard low-fat substitutions (egg beaters, applesauce, splenda, whole wheat flour and skim milk) and they are still fantastic. I would recommend cutting down the baking powder also and adding just a dash of salt. Next time I think I'll add in some raisins and walnuts to get a 'trail mix' type breakfast!
