Healthy Banana Cookies

Really good healthy snack, not so much a cookie though. I did sub Sunsweet Lighter Bake for the oil, used dried cherries (that's what I had on hand) and slivered almonds. Took the advice of a few other reviewers also and added a dash of cinnamon and some sugar free maple syrup to the bananas for sweetness. Very yummy!

Favorite Old Fashioned Gingerbread

I'm in the habit of substituting healthier ingredients and these came out fantastic! First I used 1C whole wheat pastry flour and 1.5C white; 1/4 dark brown sugar and 1/4 c Splenda; Sunsweet Lighter Bake in place of the butter and I cut the molasses back to just over 1/2c. Keep an eye on the bake time too. i used an 8x8 glass pan and they were done (almost too done) at 30 min.

Pretzel Turtles

DANGEROUS. I made these wiith mini pretzel twists dipped in chocolate and sprinkled chopped pecans on top. Then I drizzled carmel sauce on top (the sauce will not totally dry tho). That's just what I had on hand. Excellent and dangerous to have in the house......

Garlic Parmesan Orzo

Hot Pizza Dip by 3-A-Day™of Dairy

Ok, I made this for a party and I didn't even get any of it! Everyone told me how great it was and I handed out the recipe to 3 people. A nice alternative to the standard Taco Dip. This dip goes great on the Garlic and Herb Townhouse Toppers.

Lasagna Roll-Ups

I made 2 versions of this recipe, one as directed and a second using wheat pasta, cottage cheese for half the ricotta, and lots of veggies in the sauce. Both versions came out wonderful!

Green Bean Casserole I

Great alternative to the cream of mushroom version-especially because my husband hates mushrooms. Used ritz crackers for a topping because I didn't have stuffing, awesome dish.

Oatmeal Pancakes II

Ecellent hearty pancakes! I did the standard low-fat substitutions (egg beaters, applesauce, splenda, whole wheat flour and skim milk) and they are still fantastic. I would recommend cutting down the baking powder also and adding just a dash of salt. Next time I think I'll add in some raisins and walnuts to get a 'trail mix' type breakfast!
