Vegetarian Cottage Cheese Patties

I've had the other version that calls for nuts instead of oats and I like this one a lot better. No grainy texture here. I skipped the mushroom soup all together, though. I only used a cup of cottage cheese because that's what I had and the texture was perfect. Also added about a 1/4 c. of mozzarella to the mix. I patted them in breadcrumbs before frying. Ate one on a bun tonight with ketchup and mayo. So good! Will be eating the leftovers with mashed potatoes and gravy later this week. Thank you!

Cottage Cheese Roast

This is surprisingly good, actually. It's obviously not as good as Mom's meatloaf, but tasty all the same. I used low fat cottage cheese (small curd) and almonds chopped as finely as possible in place of the walnuts. Also seasoned as I would a traditional meatloaf. My favorite veg meatloaf is still Amy's frozen one, though. Yum!

Sweet Blackberry and Brandy Sauce

This is SO good. Too good, really. I added extra brandy because I liked the taste.. Oh, and I also added a little bit of vanilla extract. Over ice cream this is just amazing. It's good on pancakes, too. But ice cream? Oh man.

Whoa, whoa, whoa! The garlic REALLY needs to be cut in half like other reviewers have said. I love garlic, but this was just unbearable. Thankfully, I was able to fix it. With half the garlic (or even just a clove) it's spectacular. It helps a lot to use a very good cheese, too!

Shrimp Creole IV

This was really, really good. Perfect level of spice. I bought shrimp that were all ready peeled and deveined, but I still wanted the benefits of the homemade stock, so I simmered the tails in the same amount of chicken stock for about a half hour. I'm not sure if it was the same, but it sure was good. I didn't have bacon, so I sauteed everything in butter and added a couple of dashes of smoked paprika. Served this over texmati rice. The best!

Best Tuna Melt (New Jersey Diner Style)

I must confess, I never got around to making the melt part of this recipe. My husband and I ended up eating the whole batch with saltines before we could. What an amazingly simple and delicious tuna salad. I can't wait to try it as a melt!

Tuna Noodle Casserole from Scratch

I took cookinggardener's advice and cut down on the butter for the roux and saute. I also used skim milk in place of whole and added a quarter cup of low fat sour cream to the sauce. I topped mine with half a cup of extra sharp cheese with a few tablespoons of aged asiago instead of the whole cup of cheese and bread crumb mixture. I think that I'll add an extra can of tuna next time, though. Not quite tuna-y enough for me. You really have to season this up (Mrs. Dash, salt, pepper, pinch of red pepper and thyme). It's so great to find a recipe that doesn't use canned soup. Yummy!

Almond-Crusted Tilapia

Tofu Parmigiana

This was SO good. I did change a few things, though. As suggested by other reviewers, I floured, egged and then dipped the tofu into the crumb mixture. It stuck perfectly. I also baked it at 350 for 15 minutes for each side instead of frying (was a lot easier this way). I used provolone instead of mozzarella because that's what I had on hand. I topped it all with my own marinara and put it on a bed of whole grain spaghetti. Turned out amazing! I will certainly be adding this to my regular rotation.

Cold Macaroni and Tuna Salad

This is a good base recipe. In order to make it more like what my Mom made, I added extra peas, a chopped up onion, chopped celery, cayenne pepper and dill. Also needed more mayo than what it called for. Next time I'll try replacing some of the mayo with ranch dressing. A few tablespoons of milk really helps make it creamier.

Marinated Beet Salad

I love beets and will eat them right out of the can (much to my husband's dismay). This recipe makes them a million times tastier! Most certainly best if served at room temperature.

Chocolate Biscotti

I made these last night to give as Christmas gifts. The only change I made was to add a handful of mini chocolate chips to the batter. They turned out FANTASTIC. My husband says they taste just like brownies. I've never made biscotti before and consider myself an average baker and found this recipe to be very simple. The dough was a bit sticky to work with, but well worth the results.

Microwave Chocolate Pie

This was really good and very easy. I didn't have cream of tartar, but my meringue turned out just fine. Next time I may actually double the meringue because I like more, but all and all it was fantastic!
