Chef John's Buttermilk Biscuits

I made this recipe tonight for supper to help fill up all my boys and everyone loved it!! AND - I did as another reviewer suggested when she was short on butter and I only put in 4T. butter (which also made the recipe lighter and a bit healthier, too) and the other 3T were low-fat sour cream. I shaved the butter per suggestion of another reviewer as well and it worked like a charm. It only took a few minutes to cut it all in. Delicious! Thanks for sharing!

Garden Cheese Soup

This soup was phenomal! My hubby loved it! My tweaks: did as others and sauteed the garlic with onions and celery; I decreased cheese to two cups; used skim milk; added an extra 1/2c. potatoes, probably 1-1/2c. cauliflower. Could have added some broccoli or more carrots or cauliflower. My young boys gobbled it right up! Thanks for sharing! Oh, and I didn't add any salt, just 1/2t. pepper. The salt from the bouillon was enough for us.

Breaded Chicken Fingers

I made these tonight for supper and both myself and my two young boys (6 and 4) really enjoyed them! I accidentally didn't read the recipe fully ahead of time and didn't marinate the chicken in the buttermilk mixture. Still came out great, but will definitely marinate next time as I'm sure this improves taste and texture. I also wanted to make it low-fat, so I followed fellow reviews of baking at 350, mine took about 40-45 minutes (maybe my chicken pieces were a little bigger?). I also sprayed my sheet pan with pam and melted 1-1/2T.butter and spread over the pan. Then, I took my pampered chef olive oil sprtizer and sprayed the top of the chicken to ensure a crispy texture. I also shared some with my sister-in-law and niece and they loved it! I will definitely make again!! Thanks for sharing the recipe.

Heavenly Chocolate Mousse

This is a fabulous chocolate mousse!! Decadent and rich! I served with homemade angel food cake and the amazing raspberry sauce from this site as well, and a dollop of whipped cream on top. One thing not sure if I did wrong - but after refrigeration, the mousse was VERY thick......not sure if folding more whipped cream in or just letting it come to room temp is what should be done. Nonetheless, it was fabulous and I will definitely make it again! Thanks for sharing!

To Die For Blueberry Muffins

I love these muffins. I substituted whole wheat pastry flour for the AP flour; decreased the oil by 1/2 and replaced it with unsweetened applesauce. And the crumble topping made a ton. I only used 3T. butter and still had lots of topping. My recipe also made 12 "normal" sized muffins. Very moist and delicious with a cold glass of milk! Will definitely make again. Thanks for sharing!

Slow Cooker Chicken Stroganoff

Very good!! Both my two toddlers loved this recipe. The house smelled fabulous, too. I used 1/2 block of low-fat cream cheese and one large serving spoon full (about 1/2c.) of low-fat sour cream instead of the full block of cream cheese. It came out wonderful! I also served it with whole-wheat egg noodles and it was great. My in-laws were over for supper & they too, raved over it. Thanks for the great recipe!

Zesty Slow Cooker Chicken Barbecue

This is a great and easy chicken recipe. I did sprinkle some dried onion and "Garlic, Garlic" (from Tastefully Simple) on top of the chicken; then turned half way through. Very yummy!!
