Ham and Noodle Casserole

Made this for dinner tonight to use up some leftover ham. Pretty much followed the recipe, but, had to use what I had on hand. Substituted cheddar cheese for the swiss cheese and onion powder in place of the diced onion. Used 1.5 cans of cream of mushroom instead of chicken. It seemed like it would be dry without more soup and a little splash of milk. Baked for 30 minutes and then topped with some Colby Jack cheese instead of bread cumbs, never have liked that texture. I liked that this made a 2 qt. casserole (instead of 3 qt.) because we usually have too much leftover. This was a big hit with the family and will definitely be made again!! Green Chile and Rice Casserole

We all liked this one. Only used about 1/2 the amount of cheese called for and didn't drain the chiles. Mixed together the prepared rice, sour cream and green chiles, poured it in the baking dish and topped with shredded cheese. Then baked it until hot and bubbly. Thanks for the recipe!

Slow Cooker Pulled Pork

Used this recipe today for pulled pork sandwiches only I used a 4 lb shoulder picnic pork roast. I was concerned that using just the root beer wouldn't give the meat much flavor, so I added a couple onion wedges, some BBQ rub, a bay leaf, and some smashed garlic cloves to the liquid in the slow cooker. The meat was tender and ready to shred after about 6 hours in the slow cooker, but I was disappointed with the flavor. It was actually rather bland until I added the BBQ sauce. I also added more BBQ rub, some worcestshire sauce and some liquid smoke to the shredded meat. My family thought it was good. I will probably use this recipe again, but may need to try other some other seasonings for cooking the meat.

Hawaian Cake

Made this cake last night. So easy to mix togther and put in the pan. I included chopped walnuts. Super moist and very tasty. Used canned cream cheese icing because I didn't feel like making homemade. Great fast dessert! Thanks for sharing the recipe!

Apple Crisp II

MMM-MMM! I used 5 Granny Smith's and 3 Pink Ladies (I think). I did 1.5 times the crust. I added about 1/2 tsp of cinnamon to the crust ingredients and cut in my cold butter, rather then melting it. (My husband is eating his right now and all I'm hearing is "MMMM".) I tossed my cut up apples with the cinnamon sugar mixture, to which I had added a little bit of nutmeg. I layered about 1/3 of the crust mixture in the pan and then put in my apples with about 1/4 cup of water. Then I topped with the rest of the crust. Baked it according to the recipe. When I served it, I topped it with some warmed caramel sauce and vanilla ice cream. Man, writing this makes me want to go get another bowl of it!!! Awesome recipe!

Smooth Sweet Tea

My middle daughter always looks forward to when we travel in the South because sweet tea is served in every restaurant, not something we experience in the North except at a few fast food places. While I grew up on homemade iced tea, iced tea around our house typically was Crystal Light Peach Tea. I discovered this recipe a couple of weeks ago and, let me tell you, homemade iced tea has become the beverage of choice in our house now! Can I just say, though, if I made only a single recipe at a time, I would be makinng it at least 2 times a day. Thanks for a great recipe!!

Cheesecake Supreme

Cheesecake is my oldest daughter's favorite dessert. It is her standard request for her birthday cake. Typically I buy a frozen Cheesecake Factory cheesecake from Sam's Club. I have never made one myself before...a little intimidated by it for some reason. Well, that is no more! I made this yesterday for our Easter dinner today. I followed the ingredients exactly, but added 1 tsp of vanilla. It was super easy to put together. I did follow the baking suggestion of a non-preheated 200 degrees oven for 3 hours 10 mins. and left it sit in the stove for about 3 hours after turning it off. Then it sat in the fridge overnight. The process was somewhat time consuming, but, the end product was perfect! Granted, it is very filling....what else would you expect from 5 blocks of cream cheese, 7 eggs (combined) and heavy cream...but it was delicious! I will never buy a frozen cheesecake again!!

MMMMM... Brownies

Awesome brownies!! I doubled the recipe (except the salt) and baked in a 9 x 13 pan. It took an addtional 10 minutes or so to bake. Great texture! And tasted yummy!

Linda's Lasagna

I thought this was a very good recipe. The sauce part of the recipe was simple and delicious and I plan to use it in the future for other pasta dishes. I made it using the cottage cheese and loved the creaminess of it. The way it was layered was different than I am use to. I think next time I will make enough of the cheese mixture to add some to the first layer of noodles. And, I may mix in some ricotta with the cottage cheese, too. I think Italian sausage would be good in it, too. Overall, a very good recipe and I will be using it again! Thanks RBLAIR!!

Golden Potato Soup

This is a great recipe!! My daughter requested potato soup this morning. I found this recipe for lunch and knew I had all the ingredients (or an equivalent) on hand. I used canned chicken broth instead of bouillon and water. And I had some bacon grease in the fridge, along with a ham bone in the freezer. I sauteed the potatoes, celery and onions in the bacon grease and simmered the ham bone in the soup. Other than that I pretty much followed the recipe (swiping out cheddar cheese for the American cheese) and we were eating potato soup in about an hour!! The number of servings were accurate. We fed 6 people, but two of the servings were on the small side. Next time I'll have to double the recipe so there are yummy leftovers, since soup is always better the next day. Creamy Frosting

We used this recipe to frost my DH's birthday cake. It was very time consuming to make. Had to make 2 batches for a 9" two layer cake. Even though I followed the directions and more tips from my sister, the cake decorator, the first batch was very grainy. Used the suggestion from another reviewer of adding the sugar to the milk/flour and it came out much more creamy. It was difficult to use for piping on the cake because it was so soft but tasted good!

Stuffed Pepper Soup I

Added some italian seasoning and a can of beef broth. Stirred in one cup of uncooked white rice while simmering. End result was a little too sweet for me and not enough tomato taste. Would do some tweaking next time. Thanks for the recipe!

Chocolate Chip Marshmallow Bars

I made these for a fundraiser dinner at my school last night. They are DELICIOUSLY YUMMY! I didn't add quite all the white sugar (on purpose) and used butter instead of shortening. After I had mixed up the batter, put in the baking pan and popped in oven, kept thinking something wasn't right...realized I left out the brown sugar!! Pulled them out of the oven after about 2 mins, dumped in a mixing bowl and added the brown sugar. Back in the oven we go and baked about 28 mins. They came out beautifully and tasted great too! Can't wait to make them again for my family and coworkers!!

Baked Pork Chops I

Good recipe! Made a double recipe, so I increased the amount of the sauce based on other reviews. I used a few extra ingredients in the sauce...2 cans of cream of mushroom and 1 can cream of celery soup, few splashes of worcestshire sauce and browning sauce, a couple shakes of adobo seasoning and pepper, 1 cup of chicken broth instead of wine. Oh, and I sauteed some canned mushrooms in the pan drippings and added them to the sauce, which I simmered while the chops baked for about 20. Only baked about an additional 40 mins. after covering with the sauce and my chops were very tender and tasty! Thanks for the recipe!

Pumpkin Chip Muffins

I found a can of pumpkin puree in the back of my cabinet leftover from the fall. Decided to use it to make this recipe. Other than adding 1/2 tsp. of pumpkin pie mix, I made the recipe exactly as directed. I got 24 regular size muffins and 6 mini-mffins. They have a good flavor, but I think I will add more pumpkin pie spice along with the cinnamon. I did use the entire amount of oil indicated in the recipe, but the end result made the muffin paper seem a little too greasy. Next time (and there will be a next time) I will reduce it to 1 cup. BUSH'S® White Chicken Chili

As written, 4 stars. However, after tasting while it was simmering, I added extra cumin, some garlic powder (would have used fresh at the beginning, but didn't have any), salt/pepper and some southwest seasoning from Pampered Chef...and the end result was DELICIOUS! 5 stars for the end result!
