I am a wife of 20 years and mother to 2 daughters and 1 son. My fulltime job is teaching special-needs (autism) preschoolers. I enjoy cooking, but am not a hugely confident cook. In my downtime I like to read cookbooks, cooking magazines, and recipes...I really enjoy eating good food!

My favorite family cooking traditions
Christmas is a big time of traditions for us. Ever since I can remember, my family has been making a special Italian soup that we have only for Christmas Eve dinner. I have no idea how to spell the name of it, but it's similar to wonton dumplings only in completely different broth. The whole family gets involved with making the dumplings about 2 days before Chrismtas Eve. Unfortunately, while they help us make it, our children have no interest in eating it, so I think it will become extinct in time...sad. My other big tradition is the variety of cookies I make and share for Christmas. All my coworkers wait expectantly for them.
My cooking triumphs
My husband, who appreciates that I cook, is an "eat to live" type person. So anytime I can evoke an actual comment of pleasure over a dish is a triumph!
My cooking tragedies
One of my cooking tragedies - a pot of bean soup in the slow cooker... the seal wasn't good and all the liquid cooked out (onto the counter) and the beans burnt.

Soul Smothered Chicken
I'm not very practiced at browning and pan frying, but thought this recipe looked interesting and sounded good. Best part...I had all the ingredients on hand. I was very pleased with how this turned out and it tasted great! I didn't really measure my onions, carrots and celery, just kind of eye-balled it. I was nervous about the cayenne pepper because my kids don't really like spicy foods, but it was just enough kick without being too much. I added a little more roux to the sauce at the end to thicken it. Served it with rice pilaf and used the sauce as a gravy for the rice. Thanks for the recipe!!

Honey Mustard Grilled Chicken
Made this as written. Easy to throw together. Everyone ate it. I thought it was okay, but it wasn't a hit with the family.
