My cooking triumphs
My husband brags to others about my cooking skill with tofu and TVP. I like both, and thanks to the internet, I've found really good recipes that make both surprisingly tasty. It feels good to be bragged on like that;however, I get anxious sometimes since sooner or later I'll fall short of all the hype. :P
My cooking tragedies
Microwaved battered chicken, french toast, some bread loaves, and the occasional dinner entree spoiled by carelessness.

Campbell's Kitchen Beef Stroganoff
I did this using stewing beef for the meat and served it with quinoa (I didn't have any regular pasta on hand.). I liked how simple it was. The flavor and consistency were good. For me this recipe gets bonus points for having few ingredients, all of which were readily available in my kitchen when I needed a quick dinner in a pinch. I'll probably use this again, though perhaps not too frequently because it is somewhat rich. :)

Kale and Spinach Saag
I was the only one in my family who liked this. I accidentally over blended half of the saag for the last step, so it came out looking like babyfood- but such a beautiful color! The only thing I changed was to use olive oil instead of ghee- didn't have any and was too lazy to make some from scratch. I don't know if I'd make this again. It wasn't bad. It helped me use up all the kale I had which was why I thought to make it in the first place, but it's really too high in carbs for my husband and I to eat and it didn't particularly wow either of us.

Chicken Asparagus Roll-Ups
This was really good. Only changed two things- and that was out of necessity/ lack of having the original ingredient. I left out the bread crumbs and used sliced brie instead of provolone. It was delicious. Even one person- who doesn't like asparagus usually- liked this dish.
