About this Cook
My favorite things to cook
Hollaindaise sauce, red velvet cake, prime rib, salmon katsu with shrimp sauce, pumpkin soup, and roasted vegetables.
My favorite family cooking traditions
Thanksgiving feast including cornbread stuffing, roasted vegetable and giblet gravy, pumpkin pie, pumpkin cheesecake, garlic mashed potatoes, potato salad, and more. Also another family tradition is baking cookies during Christmas season. Followed with eggs benedict for my entire extended family on New Year's Day morning.
My cooking triumphs
Learning how to make the moistest Turkey that anyone who eats it has ever tasted (a combination of butter injection and brining).

Mini Cheesecakes
Made this for a graduation party in 4 styles: blueberry topping on plain, peanut butter cup (added about 1/2 cup peanut butter and a bag of mini chocolate chips to batter and then sliced up Reese's PB cup to put on the top), oreo cookie (added 8-9 oreo cookies slightly broken up into batter with crushed oreo cookie as a topping), and pumpkin cheesescake (added a small can of pumpkin pie mix to batter). It was a hit. All 200 disappeared quickly with many compliments.

Oatmeal Cookies Light
I substituted as follows: 3/4 c. mashed bananas 1/2 c. crisco for the margarine 1 1/2 c. Splenda+1 tbsp. molasses for brown and white sugar 4 egg whites instead of just 2 (to add more liquids because the Splenda has a tendency to absorb some of the moistness in baking mixes) I also didn't include any raisins or chocolate like some reviewers did. These subs need to be mixed differently because of the consistencies; which i did as follows: I beat the bananas and crisco until well blended; then I added the molasses and vanilla, again beating until well blended; then I beat the egg whites in until well blended; then I added the Splenda 1/2 c. at a time beating well after each addition. Then mixed dry ingredients per the recipe. You also need to smash them down with fork on cookie sheet. The end result: delicious!
