Fully Loaded Deviled Eggs
My husband doesn't like Deviled Eggs but loved these! I was taking them to a Super Bowl Party and he said he was going to tell everyone they were Alligator eggs and was horrible. That way he could eat more. Was out of fresh onion so I used some dehydrated onions. Just soaked them in some water. Squeezed out the moisture and add them to the mixture. Worked fine. Thanks for sharing!

Bean, Bacon and Pepper Soup
We really loved this recipe. I screwed up at first by dumping everything but the bacon in a pot. I cooked the bacon in the oven. Realized my mistake so I drained the veggies in a strainer and squeezed out as much juice as I could. Then sauted it. Put back in the juice. I had already put a can of beans in the food processor and the other can in the juice. I add one more can of beans and used a pound of bacon. Since I didn't sauté the veggies in the bacon grease I add a tablespoon to the soup

Ginger Scallops
This was very good! My hubby loved it! We are on vacation and have been eating out a lot so I decided to cook dinner since we are in a well stocked condo. We love scallops so gave it a try. Pretty easy except I didn't have a way to mince the ginger root. Did the best I could and turned out fine. The only things I did different was to cook the scallops separate. Also after reading reviews I add the juice of 1/2 a lemon. Next time I don't think I will add it. Severed over angel hair pasta with sautéed green beans! Yummy
