Campbell's® Easy Chicken and Cheese Enchiladas

When rolling enchiladas ( which I have been doing for about 50 years) always heat the tortillas before adding filling and rolling. If they are still diffacult dip in some hot liquid or oil . After rolling place SEAM SIDE DOWN. Love to all and good eating Jerri

Holiday Cheese Spread

This was a waste of time and money. I think it tasted like potted meat AFTER it was finished. Too bad, the recipe looked real good....but it wasn't!

Wilderness Place Lodge Cookies

I made only one change to the recipe, using 1 cup of slivered almonds in place of the 2 cups of walnuts. I ended up having so much I had to mix it in my roasting pan. I made the cookie a heaping teaspoon as instructed, and it made 10 dozen 3" cookies!!! The cookies were good, but I expected them to be more like ranger cookies ....they are just a fancy oatmeal cookie. I would just as soon make the old fashioned oatmeal cookies.

Ham Bone Soup

For those who have burned out all the taste buds on very spicey recipies, this recipe is not for you....for those who want an excellent soup for those chilly fall and winter nights this is it. I doubled the recipe, and used one can of diced italian flavored tomatoes, and one can of the reg. type. I also added some chopped celery. The ham bone was quite meaty. This soup was so good I didn't even need to add any salt or pepper!! Jerri

Suzy's Mashed Red Potatoes

When I do these potatoes I don't mash until smooth, I like a few lumps in them.....I also add a chopped green onion and some crisp crumbled bacon when mashing

Honey Roasted Red Potatoes

I tripled the recipe and took these potatoes to a church dinner. I sat next to a very good chef. He loved them, and asked for the recipe. I followed the recipe, but...mixed the potatoes and sauce in a large bowl. I then cooked them in a nonstick metal baking pan. It caused them to get very brown and carmelized. I stirred several times. and because there were more cooked them for a longet time.

Elegant Zucchini and Tomatoes

I have been making this for 40 years. Not quite the same recipe however. I use one can of diced tomatoes instead of fresh...oregano instead of basil...and FRESH parmesan cheese. People who dislike squash love this (if you can get them to taste with an open mind) :o) Jerri

Baked Ziti IV

WONDERFUL !!!! This makes a huge amount. I think the eight people this serves must all be sumo wrestlers!! :-) My family loved it. This would be wonderful for a casual dinner with guests.

Fried Butterflied Shrimp

My husband says this is the best shrimp he ever ate. ( including restraunts) I also cooked some scallops like this,and they were also wonderful. I did change a couple of things. 1/2 the water and corn starch, 2 eggs and salt for the wash. I also added about 1/4 cup of fine corn meal to the bread crumbs. I will make this often!!

Bread Pudding II

WONDERFUL!!! This recipe is the quickest, and easiest. These ingredients are always in the pantry. I served it for New Years, and the whole extended family loved it. One member of the family works in a 5 star resort, and likes it better than the resorts bread pudding !!!!

Chicken Enchiladas II

I have been making different kinds of enchiladas for over 40 years. My husband said these are the best enchiladas he has ever eaten of any type. I added a little cilantro, cumin and chili powder to the cooked chicken ( which I boiled and shredded) and a few drops of green habanero hot sauce to the sauce. They were perfect...not too hot or too mild. This recipe made 4 fat enchiladas I would say it served 3 or 4 with rice and beans on the side....

Apple Dumplings I

I sprinkled the apples with ground cinnamon, nutmeg, and cloves just befor wrapping the dough around them. I also turned them after 10 minutes, they were very flakey. I rated 5 stars in all catagories !!

Banana Nut Bread Baked in a Jar

How wonderful...I just bought 3 cases of jars. I'm going to use these as Christmas presents. My family loved it. I made a breadpan, and 3 jars full. All turned out great!

Osso Buco

I added a small amount of zucchini and tomato. I cut down a little on the water. All the herbs were fresh from my garden. I cooked this in the crock pot and the flavor was wonderful. Next tome I will strip the fat from the meat as it was a little greasy.

Chicken, Garlic, and Sundried Tomato Pasta

I made this from ingredients on hand, so subtituted large pasta, and FRESH grated parmesan cheese. I also cooked the chicken in the butter/garlic. This is the finest pasta recipe we have ever had. My 3 and 5 year old grandchildren also loved it.

Cucumber and Tomato Salad

This salad is wonderful. I have also added a few leaves of fresh basil,chopped fine and liked it that way also...a definate make once a week or so in summer.....a great way to eat more cucumbers and tomaotes from the garden.....My husband and grandchildren also liked it very well.
