Breakfast Sausage

Great recipe. I am an American living in Denmark. Although they are one of the biggest consumers and exporters of pork products, I find there are a couple types of sausages I miss that we just can't get here. American breakfast sausage is among them. All of my expat friends love this. If I ever move back to the US, I would only make this. Move over Jimmy Dean, you aren't even in the same league! I often make this using chicken instead of pork. The only thing I do differently is add a splash of maple syrup to make it perfect. Thank you for this recipe.

Scrambled Egg Muffins

Great easy recipe for a crowd. I made homemade breakfast sausage for another dish in my brunch, so I used bacon in these instead. I also added chives. Very good when cooked at 20 minutes, but ovens do vary. Just pull them out right at the point they look almost done as they will cook a bit after you take them out of the oven.

Three Cheese Green Salad

Delish! I used pine nuts instead of pecans. Very versatile salad. It would be great with chicken or the addition of apples or dried cranberries.

Bacon Risotto

Very yummy! I added some mushrooms that I sauteed in the bacon grease. Used red onions because that is what I had on hand. I also used a bit (2-3 tbl sppons) of dry white wine in the first round of adding liquid to the rice.

Colorful Bulgur Salad

Very good salad. I used lemon juice instead of lime and added a bit of EVOO. Only added chili powder to taste. Make sure the dressing has a bit of a bite before you add the bulgur as the bulgur sucks it up.

Jim's Pork Chorizo

I thought this was quite good. My husband and I are from California but living in Denmark. We really miss the Mexican Chorizo, and this really hit the spot. I did add a splash of red wine to the mix as I have seen it suggested in other recipes.

Um, YUM! These we wonderful! I did decide to add a little red pepper for added spice, but they are still 5 stars without it. I only had chunky peanut butter, but wow.

Mexican Rice II

Quick and Easy Vegetable Curry

This is a pretty good recipe with a few tweaks. First, I halved the oil and used butter for the other half ( not as healthy, but adds authentic flavour to Indian recipe). Next, I added some fresh ginger for added spice. Then to get a bit spicier, I added two generous pinches of chilli powder (Indian chilli, not the American kind you use in chilli con carne).

Pineapple Curry Rice

I was short on the juice with only about one cup, so I added a cup of water to make a two-one ration. I also upped the cooking time to about 20 minutes. The rice came out cooked to perfection. I must say that, as curry lovers, my husband and I found this to have a bit too much curry. I will make it again but reduce the curry by at least half. For those of you who have a problem with rice sticking to the pan, make sure you reduce heat to as low as possible. If you still have problems, coat your pan with a tad of vegi oil, though in this recipe, the butter should help.

Baked Honey Mustard Chicken

I was looking forward to making this, but was disappointed. I really didn't like this recipe AT ALL. Perhaps they would be better on the grill. My husband said it was just ok, but suggested the flavours would be good on pork. I will not make this recipe again.

Grecian Pork Tenderloin

My husband and I really enjoyed this recipe. I served it with Oregano Cubed Potatoes and Greek Style Green Beans (recipes from this site)and a Greek Salad. I also roasted it as I was too lazy to get the coals going. Next time, though I will just add the potatoes to the pork and drizzle with the marinade in one dish.

Coriander and Cumin Rubbed Pork Chops

I love pork chops, and this is one of the best recipes for chops that I've tried. A great side dish for this is pineapple curry rice.
