I was making crepes for Valentines brunch and I couldn't find my regular recipe.. logged in here to find this one. Turned out perfect! Great batter. I used whole wheat flour instead of white, and substituted Splenda for sugar. Added a spash of real vanilla, and per some of the other suggestions used a little more flour than the recipe called for. Oh, and I did run the mixture through the blender which helped make it extra smooth. Made two types of fillings: First one (photo) was feta, spinach and cherry tomatoes. The seconds one was nutella and bananas with a touch of honey. Yum! Will use this one again for sure!

Beer Butt Chicken

Such a great way to make a moist chicken. Slight modifications, used 1/2 the butter and added olive oil. Added a bit more crushed garlic and some rosemary. Next time I think I would marinate overnight with a bit of a spice rub. 1 Chicken took about 1 1/2 hour on the propane bbq. I used a glass baking dish, with foil under to collect drippings, which I then used for a gravy.

Quick and Easy Home Fries

Good method, have made this a few times now. I do add a bit of olive oil to crisp up the potatoes a bit. I've tried both cubed and in round slices, and both are good! I also like to sub in a bit of garlic salt.

Banana Sour Cream Bread

Excellant recipe... really moist with the sour cream. I used cashews that I had on hand instead of walnuts and I substituted the sugar for splenda and was quite happy with the result. I did 1/2 of the recipe and ended up with one loaf pan and about 6 muffins.

Easy Polenta with Tomato Sauce

Good recipe, easy to follow. I added minced garlic during the boiling stage. Used real grated parm. I baked in a loaf pan without the sauce and served with a baked chicken breast that had tomato sauce which we used over the polenta at serving time. Will try again, might try grilling or frying the slices next time. This had more of a bread texture, but it was good!

Key West Penne

Really tasty... found I didn't quite have enough sauce so had to whip up a little something else for the left overs. A couple changes, we're not fans of olives so we took those out. Drained the sundried tomatoes (only used a bit of the oil). Chopped those and the artichokes into smaller pieces. Instead of cream I used milk with cornstarch, and about a 1/4 cup of white wine. (Would have added more but it was all I had left!) Added garlic! Was a bit bland before that.
