About this Cook
I recently received my degree in Nutrition and Foods and I plan to become a dietitian. I enjoy cooking and I try to make healthy versions of recipes.
My favorite things to cook
I like to make muffins and quick breads. I usually use applesauce instead of oil so they are a little healthier. Cookies are fun to make, but I don't like rolling out the dough to cut them into shapes.
My favorite family cooking traditions
I try to make tacos the way my mom used to and they come pretty close. Other than that, we don't have any cooking traditions.
My cooking triumphs
I made cinnamon rolls once and they were really good. I probably won't make them again though because the whole dough rolling was tedious.
My cooking tragedies
I've burned cookies a few times, but they were still edible. I made an apple pie from scratch once and it never got thick in the middle. It was really runny, but it still tasted good. Nothing I've ever made has been inedible at least, lol.

Best-Ever Meatloaf
This meatloaf was pretty good. I mostly followed the recipe. I only had 1.5 lbs of ground beef and I added a one chopped up bell pepper. Also, I didn't use the other half of the soup for the topping because I used ketchup instead.

Peanut Butter Bars I
I followed the directions exactly as written and it was so yummy! I made it for my husband's birthday because his favorite candy is Reese's Peanut Butter Cups and he loves peanut butter. He liked these bars more than his favorite candy! I will be making this again, but only for special occasions cause they're so bad for you.

Enchilada Casserole III
This was awesome, but I made some changes. I used no fat black refried beans, and canned enchilada sauce. I added half an onion and half a green bell pepper both diced to the ground beef (extra lean) and then added a small can of diced green chiles. Also, I used 2 cups of low fat Mexican blend cheese. I baked it for 25 minutes covered and 5 minutes uncovered so the top turned out a little crispy. It was very tasty and my husband really enjoyed it too!
