Tangy Sugar Snap Peas

I really thought this would be good. I love a tangy taste - and I love my sugar snap peas. Unfortunately, this was NOT "two great tastes that taste good together"! The sweet and sour taste just didn't complement the peas. And the leftovers would seem to suggest that my dinner guests agreed with me.

Candy Coated Pecans

I used frozen pecan halves in this. I had to increase the cooking time, but otherwise I followed the directions exactly, and it turned out wonderful! I couldn't stay out of them, in fact! I made these to add to a Gorgonzola and Pear salad. Perfect!

Foil-Pack Taco Chicken Dinner

This recipe was a big hit at the dinner table tonight! I followed the recipe exactly (except I used generic ingredients) and it turned out perfect. I did slice my potatoes pretty thin, though. I don't think slices thicker than about 1/8 inch would get done in time. Edited to add that I did not peel my potatoes. I used size "B" (around 2") red potatoes and just scrubbed really well. Tasted Great!

Slow Cooker Sweet and Tangy Chicken

I, personally, could not get enough of this sauce! However, my family classified this as "just barbeque chicken." I did thicken the sauce with corn starch - and that really helped. (Remember to dissolve your corn starch in a little cold water before adding to sauce.) I will definitely make this again, because as far as barbeque chicken goes, this was pretty good!

Unbelievable Chicken

I've used this marinade twice so far - once with grilled chicken kabobs, and once on grilled chicken breasts. It is indeed a very good marinade, but it doesn't magically transform chicken breasts. I highly recommend this recipe if you are looking for a good basic marinade. I do not recommend this recipe if you are looking to astound your guests with your culinary genius (ha).

Scalloped Corn and Broccoli

this turned out very nice! I used a bag of frozen broccoli with cheese sauce since that is what I had on hand, and doubled the amounts on all the other ingredients. I pre-microwaved the broccoli and cheese sauce so that the "cheese chips" would be a little melted and blend better. My family really liked the slightly sweet taste - and it was a welcome change from our usual side dishes. (I baked this in a covered dutch oven.)

Kielbasa with Peppers and Potatoes

We just finished eating this. For a meal done in 15 minutes, it can't be beat! I used a bag of frozen peppers and onions, since that is what I had on hand. I just made sure it was thawed and drained before adding to the potato/sausage in the frying pan. I did not peel my potatoes. Added a little red pepper flakes and garlic pepper (as well as salt). My whole family really enjoyed this! I give it 5 stars for ease of prep, and 4 stars for taste.

Flat Iron Steak and Spinach Salad

WOW! This salad was excellent! I had a few friends over for lunch, and prepared this. Every plate was practically licked clean! I grilled the steaks ahead of time (night before) and just reheated them in the microwave, however I am sure it would taste even better with freshly grilled steaks. I used red cooking wine instead of regular wine, a combo of green and red peppers, and reduced my dressing (which I doubled) separately. I definitely plan on making this again!

Baked Cream Corn

I thought this was a very easy way to make a simple side dish a little more interesting. I did not add the celery salt, onion or garlic powders, because I really didn't feel it was needed. I also cut the amount of butter in half to reduce calories. This recipe will be added to my regular rotation.

Chicken Enchiladas V

This is practically inhaled by my family! I've made it several times and it is impossible to mess up, I've even substituted a can of Rotel tomatoes for the green chilies, and it tasted great.

Poppy Seed Chicken II

This is simple and really awesome comfort food! Like others, I put the poppy seeds in my sour cream mixture as well as the topping. Just a tip on the crackers - I use one stack, and crush them in the package by pressing down from the top with the palm of my hand. This works perfectly every time! Also, 1/4 cup of butter is plenty!

BBQ Country Style Ribs

This literally fell apart. I have never had pork this tender before. I did increase the temp to 320 and reduce cooking time by about 30 minutes. Next time I think I will cook it the full time at 300.

Cheesy Baked Grits

I'm giving this 4 stars because I might make it again if I'm looking for something a little different, but this recipe wasn't a big hit. It did get eaten, but no real "yummy" comments. It seemed really dry to me, so next time I might add a little more milk.

Shrimp over Cheese Grits

My company just left, and I just had to write a review of this awesome recipe. Everyone LOVED it, even my totally picky 19 year old! I had something similar to this in a restaurant last month for $24 a plate - in fact, this might have been better. I followed the recipe with these exceptions. To the grits I added crumbled bacon and salt and pepper to taste. In the shrimp stir fry, I used the entire bell pepper (total of 2) and also sprinkled it with a little red pepper flakes for heat. That's it. WOW was this great... and simple!

Daddy's Sausage and Peppers

My family loves this so much that it is now in my regular rotation of recipes. The only change I make is to use a low-fat chicken sausage, which I remove from the pan once it is browned and replace when I put in the mozzarella cheese. Oh, and don't make the mistake I once made of using more than 1 can of diced tomatoes. It changed the consistency of the dish (too soupy) and it wasn't as good. Even my non-vegi eating kids love this! Try it!
