Make-Ahead Vegetarian Moroccan Stew

I doubled the recipe in order to use an entire bunch of kale, which is easier to buy-- came out great (and HUGE!). I also used 2/3 of the recommended broth and the rest water to save a little $$ and the taste didn't suffer. Great with parmesan and/or hot sauce. Yum!

Pumpkin Coconut Curry

This is also delicious with squash instead of pumpkin. I made 20% more sauce so I could toss in some chickpeas and spinach-- and left out the chicken-- make it vegetarian and filling. YUM!!

Country Seed Bread

I have made both this and the Flax and Sunflower Seed bread quite a few times. This recipe, I believe, has a nuttier flavor and a better aftertaste.

Pork and Spinach Salad

One of the best and easiest salads I have made. The green onions are a great alternative to regular and look snazzier too. Don't skimp on the mushrooms or olives; all the tastes mingle perfectly. I used a sundried tomato vinagrette and it was smashing.

Ukrainian Red Borscht Soup

Loved this. It's a great way to use a lot of root vegetables that may be sitting around in your fridge/pantry. I'm not sure if this goes against the rules of what makes a borscht, but I added a little vinegar to taste, and found that it added a nice element to the soup.

Breakfast Casserole II

I made this for vegetarian friends, so substituted an equal weight of black beans for the sausage. I added cayenne pepper, black pepper, paprika, and salt to make up for the flavor from the sausage that would be missing. It was a huge hit! The potato chunks break down so it looks like they were mixed in from scratch. Yummy and much healthier than many other b'fast casseroles.

Mac's Shoe-Fly Bread

This bread came out better and more evenly shaped and cooked than most recipes for my bread machine. I was super happy with the moistness, the softness, and the color. The only reason I'm not giving 5 stars is that it has a slightly weird aftertaste. I did use half wheat flour though, so next time I will use only white and potentially give 5 stars. Thanks!

Baked Falafel

Easy and delicious! I used less oil than recommended and it came out fine. I also added some fresh cilantro- excellent. I've found that you can saute and chop up pretty much any veggies you have and throw them in along with the onions and it tastes great. Just be sure to increase the am't of base ingredients if you increase the volume of added goodies, otherwise the patties fall apart. Thanks for the yummy recipe!

Downeast Maine Pumpkin Bread

The consistency is wonderful-- very soft-- but I detected a bit of a weird aftertaste. Next time I will up the cloves. I also tossed some Craisins into one loaf and that was yummy.

YUM!! Way too much sugar, though. We used 1/3 the recommended sugar and just half the butter. It was still decadent. Save yourself the calories.

Apple Cole Slaw

As-is, this recipe leaves the cole slaw quite dry. I like it that way. If you like your slaw soggy, you should double the mayo and lemon juice!

Watermelon Gazpacho

This is definitely an off-the-beaten path recipe. Super healthy and a yummy mix of flavors. Definitely go with the cilantro! It tastes awesome. Also I recommend chopping everything pretty small-- otherwise you're basically eating salad with tons of watery dressing.
